"What have you eaten" Parallel Chat

@Annb your chicken and pork aspic sounds interesting - hope you have felt well enough today to do it. I really dislike frankfurters too - I still remember the disappointment I felt when on a visit to New York years ago, after having been told they were an essential New York experience but made me feel yukky!
@jpscloud I'm looking forward too to when our outdoor plants take off - crossing fingers.... I put some summer bedding in a few pots including cosmos that I grew from seed and I'm just hoping they take. I had to water them in as we only got a very light shower. I also found ants had taken over the very dry compost from last year in some of my pots so had to ditch and replace the last year's compost. I had planned to use again for flowers and put a few plant feed granules in them to support them. Oh well looks like I'll need more compost than planned.
 
Porridge for breakfast, then planning cottage cheese salad for lunch and beef with vegetables and a small portion of cooled and reheated pasta for tea. I have lost about 7 pounds since January and it seems to be a trend, albeit an extremely slow one. I'll take it, I'm grateful that mounjaro seems to be giving me a "normal" appetite after a lifetime of chronic overeating. In July I may get a dose increase to help with further weight loss - I finally have hope that I can get to a point where I don't feel disabled by my weight.

@shelley262 I love cosmos but haven't really had much success with it - my mum used to grow it really well. I'm trying calendula sunset shades and sherbert fizz this year, with lots of nasturtiums to relocate caterpillars to, and plenty of tagetes/french marigolds. It's strange how my colour preferences have changed, I used to avoid orange tones and preferred blue and white flowers but now I am hankering after blazes of orange and apricot!

Hopefully no rain today so I'll get some more garden jobs done. When you grow vegetables it seems there's always more jobs than time, even now I'm retired and (finally) have very few responsibilities to take me away from it!
 
Cooked, chilled and reheated rice with bits and pieces in it for breakfast. Resistant carbs didn't work. BG currently 13.4.

2nd meal: more of the meat and cabbage stew kind of thing.

Currently defrosting the big freezer. It had finally reached the stage where it could be emptied into the big fridge and the 2 small freezers so today it is! Some of what is there I know I won't keep so the load will be less when it goes back on again. Neil reckons we would be better with 2 small freezers to replace the big one and 2 small fridges to replace the big one so that we have more control over the temperatures and make it easier to empty and defrost them when necessary. I'll have to think about that - it looks as though many of he modern ones have internet connections for some unknown reason (other than to enrich Amazon or somesuch organisation, of course). I don't need a fridge or freezer to tell me what I need to buy more of, or to order it for me. I have Neil for that.

It looks as though some kind of fish stew is on the cards. I appear to have packets of white fish, smoked fish, scampi tails, squid rings, small pots of left-over smoked mackerel, prawns, fish fingers - a whole frozen shelf of fish, which was frozen shut so I couldn't get into it to see what was there. I really do have to work out a better way of managing my freezers.

EDIT: just after 5 pm. The freezer sorting operation is done for today. It is now all put back together - apart from the bits and pieces I decided to throw out or cook tomorrow. I have a whole shelf full of soups of various kinds. There must be at least 10 litres of soup on that shelf. Veg shelf is half empty. Meat shelf is about 3/4 full. Baking products almost empty and the last shelf/basket at the bottom has 2 packets of Quorn in it. Not sure if I'll ever use those but at least I can see them now and decide at my leisure.

One of the small freezers to be tackled tomorrow.

It's a dystopian nightmare! Well done on all that sorting. Although I do manage to keep on top of using things up, I am a bit disorganised and wish I would keep different foods in their own areas in the freezers like you do, but I end up rummaging around and mixing it all up!

I had porridge for breakfast, corned beef salad for lunch and I'm late coming in from the garden because the cooler weather suits me for getting a lot done so I kept going - now it'll have to be something quick for tea, because I still have to shower and finish changing the bed. Maybe fish fingers and vegetables.
 
BG stayed in the 8's and 9's for most of yesterday (so much for resistant carbs), still 8.9 this morning. Eased down to 8.0 before breakfast.

Breakfast: Egg mayo on RyVita. It was going to be avocado but I'm still waiting for the one Neil bought last week to ripen a bit. I put it in a bowl with some bananas days ago, but it is still almost as solid as a rock.

2nd meal - I still have quite a lot of the meat and cabbage thing that I made a day or so ago, so should have some of that.

Should be doing some cooking today to use some of the things I allowed to defrost yesterday - that was the plan, along with tackling one of the small freezers. Feeling a bit bleeaurgh today though, so I guess that's not going to happen. Probably on my feet too much yesterday. At least that big freezer is in good shape again and the utility floor is lovely and clean with all that melt water having to be mopped up.

I did force myself to do all the cooking that was needed to stop defrosted things from going off. Now my back feels as though it is broken and I can barely move. At least it is done. Now I just have to find somewhere to store all the tubs of food - back in the freezer, I suppose.
 
I was hoping to have avocado crushed onto RyVita for breakfast, but the darned thing is still rock hard so that was out. Made a quick fruit salad instead and had it with some yoghurt. Coffee.

2nd meal will be fish pie - the filling without the potato topping.

I really have to try to take it easy today (even easier than usual). Yesterday was very heavy going and it took a toll on my legs and feet as well as my back. That led to a horrendous night when I had to sit on my office chair all night with my feet flat on the floor - that being the least painful position for my right foot. Pain is succumbing to painkillers now but I still can't flex my foot/ankle or wriggle my toes. My foot seemed to have set in one position and won't move. Hence taking it easy.

I had porridge for breakfast, cottage cheese salad for lunch and I'm about to have curry again for tea. I think this is the longest samey food streak I've ever had! Salad for lunch helps because it doesn't send me sleepy and stop me being active.

Speaking of active, I didn't really get a lot done today but I did sow some more lemon corriander and finally sowed the brussels sprouts - for some reason it's always the last thing I think of and last year I didn't get around to it at all. I love sprouts though and they are great for harvesting through the winter, so I'm getting them sorted this year!

I'll also have swedes, carrots and kalelettes through the winter if all goes well. I hope the multi head cauliflower will go through the winter too but I'm not sure about that one - worth a go anyway.

If I'm successful with my winter squash, I should have some to keep in the house into winter as well. It's odd thinking about the depths of winter when I look at my little seedlings, when we haven't even finished spring yet! But the swedes and carrots were so successful last year it's really encouraged me to plan for winter food.

Your winter planting and sowing plans definitely illustrate your gardening enthusiasm. The results though in terms of how much better home grown veggies taste is well worth it. But think I'm definitely a spring and summer gardener and grower! I'm still holding off on planting out my many tomato plants -I do take them outside most days and then bring them back in but even in the day atm it's a bit cool for them even in a sheltered spot! Maybe a change back to those few lovely summery type days soon? My Cosmos and beans are out in pots and seem to be surviving - crossing fingers. The wind especially yesterday was cold so I'm surprised they are ok!

Planning for winter vegetables is all pretty new to me too, but I love how they keep fresh in the garden until needed. I used to get frustrated with myself for wasting a lot of vegetables bought and forgotten in the fridge, but now hopefully I can just pop into the garden and harvest vegetables minutes before eating them!

I've put my tomatoes in the polytunnel now, with just the windowsill sungold staying indoors - the first truss is looking tantalisingly close to ripening! The polytunnel ones are growing much more slowly but looking healthy so far.

I do hope we get some lovely sunny warm weather soon but this cooler weather is better for me to get garden work done, so I'm quite grateful for it!
 
I prefer a cooler spring and summer too for me, as you say you can get more done and I like long hikes too. It's just the tomatoes that are clamouring for it to warm up

Breakfast: The avocado was still rock hard so I decided to grill it. Added a few slices of apple and some chunks of melon to the grill and then strips of that Polish ham mixed with the result. Everything was improved by association.

2nd meal will be the rest of the fish chowder from yesterday.

Found another 2 1/2 litres of soup in the small freezer in the kitchen - Cullen skink and Chicken and leek. There's some pretty solid ice in that little freezer. Neil got out his heat gun to start it defrosting. He looked rather exasperated when he saw how bad it was. He didn't berate me though.

I was going to do some baking today to prepare for some expected visitors on Friday, but I found a whole walnut cake in the freezer which just needs finishing off. Normally I would make a coffee frosting for a walnut cake, but I have a feeling that at least one of my guests doesn't like coffee so I tħink I will make a cinnamon frosting this time.

Just had a phone call from the plumber, at last, to say he will come to fix our shower door on Friday, "first thing", so about 8 am. I hope he can do the job before my friends arrive. It should be quick enough, but it's never safe to assume that a small job will take 5 minutes.
 
I ended up running errands again today - I had porridge for breakfast, cottage cheese salad for lunch and beef with vegetables for tea.

I ended up spending the whole day running errands, and tomorrow I'm out with a friend for lunch.
 
Breakfast was rather late today. I was up in good time, showered and ready to go out in good time. Put a low carb soda scone in the oven for my breakfast and .... fell asleep, waking with minutes to spare before we had to go to town for my appointment. Finally got my breakfast at 1pm. It was going to be soda scone with bacon and egg. In the end it was soda scone (not all that good because it had gone hard in the oven - I'd left it there and just turned the oven off - and because I put too much baking soda in it. Crunchy on the outside but nice and fluffy on the inside. I did squeeze some Primula cheese onto the scone.

2nd meal will be ham salad (Ayrshire cured ham - haven't seen that in ages, but Neil found it last shopping day).

Another shopping day today. Apart from groceries Neil had to buy some new secateurs. The previous ones fell apart as he was cutting back some shrubs which had spread over the path.

@Annb I always have that issue with baking soda - I carefully measure it when adding to ingredients but it always seem to fly out of the pot and weigh more than I wanted! It can also cause a real bitter taste if too much.
Hope your Ayrshire ham is as good as you remember.
 
Porridge for breakfast, then had a lovely day pottering around a garden centre followed by lunch - I had fish and chips but didn't eat the batter or many chips. It was lovely to catch up with my friend.

Must do garden jobs tomorrow, even if it rains! I have to figure out how to fill these two new raised beds as cheaply as possible, without risking the precious crops. I think I will just half fill them for this year, the runner beans did fantastically on half a raised bed full last year.

2nd meal will be one of the low carb pasta things we have in the cupboard with onions and peas. Neil thought he'd try tinned garden peas to see if he can tolerate them - he can't tolerate fresh or frozen but, sometimes things in cans are OK for him. He had a few - no immediate harmful effects, but he won't use the rest. So I'll use them up before they go off.

The plumber is here fixing our shower. The old door was damaged years ago and we've been trying to get the part to fix it with no success. It appears that the cubicle we installed way back then, is no longer made so it's a new cubicle - at least the base is still OK, and the shower itself.
