What have you eaten today?

I sometimes add onions gently fried then put a selection of mushrooms. But its the cheese that brings it all together. A splash of cream makes it nicer. The gruyere too is nice or even three cheeses. I first had it in switzerland skiing. Its fabulous and almost zero carbs
 
Thought i'd pop on and share a new low carb discovery to try and help all the LCHF's .Hunters Chicken in White Wine sauce is £1.29 in Aldi ...10 grams carb the whole tin !! but you can add any veg of your choice and make it in to a really tasty two meal casserole .Popped mine in the slow cooker with cauli,brocoli,mushrooms and leeks (can be heated in a pan just as easily)....delicious .Obviously fresh is better but we sometimes want an easy tasty meal and boy was it tasty and a really good amount of chicken too but with enough sauce to coat veggies.
 
B Not a very good bulletproof coffee :( sloppy work there. Also home-made cheese biscuits w/cream cheese & avocado
L Tuna salad, lettuce, sorrel, celery, cucumber, tiny bit of beetroot & yellow pepper, rest of the avocado, mayo
T Roast lamb spread with paste of coconut oil, rosemary, garlic & thyme w/ steamed veg (no roots) & gravy using red wine thickened w/ buckwheat flour
No snacks so far! Must be poorly.

mmm mouth watering. Zero carbs but zillions of calories. ;Lol.
 
Breakfast bacon, poached egg, mushrooms
lunch hot sausage from deli as last slice of frittata went as I was in queue
dinner steak, mushrooms, 4 skin on homemade wedges - no salad as Mr Ethyl had eaten all of coleslaw at lunch

snack 2 sq dark chocolate, 12g cheese portion and if BS ok at bedtime, half an apple.

L. 25g corned beef, slice of roast ham, smidge of branston
D Home made chicken coujons, steamed Brussels, cabbage , spinach

Total carbs 46
 
Breakfast: Some almonds. Green tea &coconut oil . Avocado with cheese grilled and drizzled with olive oil
Lunch: crustless quiche
Snack: olives, cheese and gherkins
Tea: Tin of salmon mixed with garlic mayo, salad and some roasted beetroot
 
B home made yoghurt and berries and chia seeds
Coffee NONE. Sobs
Mackeral pate on celery sticks and posh scratchings
Dinner
Oooh well I was naughty and succumbed to 1 slice of pizza with salad and buttery garlic bread
Readings were 7.2 after so I got away with it. Maybe because I lost the 2 stones and also was only a few carbs over 50g yesterday. ( I think(

But. Now I'm craving carbs again. So hard core fats today
So did the pain ease when you stopped with the coffee?

If so, my goodness, I feel your pain (in a manner of speaking, of course)!
 
Oh how could I forget? Also had Coyo coconut yoghurt - snaffled a tub in the car after stopping by Tesco on my way home, thanks Brunneria, it was very nice. p.s. they are 3 4 2 at the mo, need to be at that price!

Weirdly it has eased. Whether its the coffee or not I don't know though. Ms gets me by surprise still with flare ups. But my bgs are great now and I've put a pound on so I'm happier

Well, you know how to test the coffee => MS pain theory...

But back to ME ;)
My first couple of days snaffling 10g carbs per meal has been sooo interesting.

I think I have ballsed up by going for wheat (karg crackers, mini wholewheat pitta and pikelets :wacky:)
I've spent the last 24 hours glugging water with an insatiable thirst. I usually aim for approx 3 litres a day. Today, I've drunk nearly 4.5, want more and I'm not peeing it out.

Unless the floodgates open, I'm thinking I'll have gained around 7 lbs in one day.

However, the blood sugar side of things has been brilliant.
I had a suspiciously high dawn phen 7.7 this morning, but forged ahead with pikelet, salmon pate and coffee with cream for breakfast. 6.2 at two hours. :happy:
Smoked mackerel, karg cracker and butter for lunch. 6.6 at 2 hours.:happy::happy:
Chicken thigh stir fried with baby corn, broccoli, green beans, runner beans and baby carrots. 6.1 at two hours.:happy::happy::happy:

What a result!!!

Two downsides. The water retention means I need to switch to non wheat (poss non grain carbs). And my BG has not been below 6, even pre lunch and dinner. :(

Will give it a week and re-assess, because I am not going to waste my lovely carb stash. :)
 
Hello Pavlovsdog... not a bit of it... :) I have ulcerative colitis and was soooo worried about eating low-carb.. I make almond bread with flax-seed meal and pile it with marmite, cream cheese and herbs - or ham - or low-sugar jam, eggs or anything really... and I eat milled pumpkin, sunflower and sesame seed - plus milled chufas, which is called Tiger Nuts - it's a Spanish root actually, not nuts or seeds... I have been eating low-carb because of newly-diagnosed T2 for about 6 weeks and I have never been so well... my UC is non-existent for the first time in around 40 years and, although I have never been overweight, I have lost 5 kilos.... my hair and nails are stronger and I feel full of energy... none of that tiredness and weakness after food now... no running to the loo... no gulping bottles of water... etc... and only one dizzy spell in all that time... and best of all, no meds.... :) You have to be strong and eat low carbs - you need to research - potatoes, sweet potatoes, parsnips, etc, in fact all the obvious veg, are not good... porridge is bad for me, so maybe you could have what I have ... a smoothie with lush full-fat Greek yoghurt, handful of blueberries and 4 strawberries or raspberries (frozen or not), half a small banana or peach, all the milled seeds and slake it with some full-fat coconut milk... :) It's lovely, and my readings after 2 hours are always around 5... especially if I exercise afterwards... it's very quick to make and drink - you could put a straw in it and take it in a take-away coffee cup if you need to leave for work.... My goodness - you'll need to lie down after all that rabbit from me! Look up low-carb recipes - the net is awash with lovely stuff.... good luck....

Thanks so much for the tips @Susikav. I never thought of smoothies, but thats a really good idea which I will investigate further. I think the key is, as you have said, research the net. I am also quickly coming to the conclusion that I may have a wheat intolerance/sensitivity. I have been out for lunch today and had a teeny weeny bread roll but within minutes I had stomach pains, nausea and tiredness. Since I got home this afternoon I have been really ill. The only things I ve had have been the bread roll, or some brazil nuts yesterday which I havent had for ages. Going to the docs tomorrow....
 
I found wheat always made me bloated and feeling rubbish. It's nit something I've trued since low carbing in any meaningful way ( sneaked a sliver of mr E's pizza a few times but no bread or crackers). Maybe try spending your carbs on something like brown rice, or rice noodles? Roast parsnips or roast beetroot? Bit of fruit?

L: out to lunch today, but I couldn't eat it all due to ingestion of bread roll I think. Took my dessert away in a doggy bag, I'm not missing that! Have been ill all afternoon, so nothing else to eat, just drinking plenty of water :grumpy::grumpy:
 
I was a bread addict and could easily get through a loaf of lovely fresh bread, no probs. However, since low carbing I haven't had any except for the poisonous roll today, and a teeny bread roll in M&S which also upset my tum, but not as badly as today's episode. No more bread for me, I don't miss it now anyway but if this is the result its not worth taking the risk. Thanks for your suggestions @alliebee and @cold ethyl
 
Last nights BG 5.2

This mornings fasting 5.7

Breakfast fruit and fibre coated with double cream

Lunch 2 slices of Horvis Nimble bread, slice of ham and some goats cheese (sandwich)

BG pre Dinner . 5.2

Dinner. Omelet of mushrooms and tinned sweet corn, a 90% pork sausage, couple tinned tomatoes and some cauliflower cheese.

BG post Dinner 4.3 Done this reading 3 times as I couldn't believe it.

Snack this evening 2 handfuls of peanuts.

This evenings BG reading 5.2
 
B bacon x 2 slices
Two cherry toms
Two chestnut mushrooms
1 fried egg bullet proof coffee
Lunch and dinner spag bol sauce approx three tablespoons and 75 gramscheese ....

Had a few bad days ...ate carbs +++ bread pastry etc ..and had nasty carb craving and hungar pangs .but now back on track ....
