What have you eaten today?

Breakfast 1 slice Bergen soya and linseed toasted bread
Lunch same as breakfast but with a little cheddar cheese
Dinner cheese omelette, roasted chicken breast, tomatoes
Total Calories 869 consumed, probably have a snack of some nuts later.
 
That sounds delicious! Thanks Ethyl, will give it a go :hungry: A trick I learned recently is that when using shop bought paneer, is to cut it into cubes and soak it in water for half an hour before using. Plumps it up as the shop bought cheese is all squished into the packet. (Maybe everyone knows this, but it was news to me lol)

When my son makes a pasta dish for himself, whilst the pasta's cooking and he's preparing the veg.... he cubes the paneer, soaks it in a bowl of hot water or stock, by doing this it makes the paneer plump, soft and squigey. Then he drains it and adds the paneer to the rest of the ingredients in the pan. By doing it this way it allows the paneer to soak up any sauce in the recipe. Btw I looove paneer :)

Lunch Egg omelet with 1 mushroom and a small piece of cheese. 3 Cherry tomatoes 1 small round of Burgens soya and linseed bread. Stick of Celery.

Dinner. Roast chicken, sprouts, cabbage, carrots, 1tbs mashed Potatoes. Gravy.

Snack. 100g Natural Yogurt and 2tbs of linseed millet.

Steady throughout the day.
 
B: porridge mixed in Greek yoghurt with raspberries
L: salad with mixed ham and cheese
D : roast chicken and mushrooms followed by Greek yoghurt and blueberries
Snacks: 4 cream crackers with butter and cheese, small portion of grapes
 
B.bavon x2 courgette I black farmer gluten free pork sausage and a fried egg.
Snack almond milk unsweeted 100mls and teasppon of coconut oil.
D.cheese extra mature and mixed green salad ..mayo
I tablesppon boiled rice with almond milk and coconut oil.
 
Yesterday
B was bacon wrapped round little sausages (eaten going round supermarket) my mum would not have approved :(
L was chicken ceasar salad. I'm getting rather fond of this lunch
D was cheese and chicken omlette with a greek salad

Was 9.2 this morning :( doing no harm as no side effects so will keep trying till all gone, hope you have better luck
 
breakfast bacon, 1 egg scrambled
lunch 1oz cheese soya latte 1sq chocolate
dinner chicken bacon mushroom casserole with white wine gravy, few peas, 1 potato croquette.
 
B - warm smoked mackerel with cheese bites and butter
L - Leftover soup (basically beef dripping, seasoning and veg with tomato puree for colour, whizzed)
D - Belly pork casserole with butter beans and steamed veg
Snack - carrot cake (testing for spiking)

*Was away till yesterday so scratching about a bit for food today.
Found staying at B&B that they served mixed berries among the fruit at breakfast, and lovely thick yoghurt; also the fried breakfast without sausage or toast was just right; also I added a couple of butter pats to scrambled egg for a bit of extra fat; and they did super kippers too :joyful:
 
B - large tomatoe, with 6 olives and 3 oz cheese and a little olive oil
L - chicken salad
S - 2 x 9bars ( was a feeling sorry for myself moment )
D - salmon with broccoli, peas and runner beans and 2 x baby new potatoes
 
B 2 egg omelette
L at work, went to cafe had 2 bacon, 2 sausages fried egg mountain of fried mushrooms, black pudding and couldn't resist a fried slice, with a cup of caffeinated tea for afters, ( I don't do caffeine normally, was very nice ) with a 2 hour BG of only 0.8 rise

D just made courgettey spaghetti for the first time, with mince. Didn't like at first but it grew on me as I finished my plate, who knew

I'm a celebrity back on tonight, anyone else been watching it..? lol
 
Yesterday:

9bar and creamy coffee
Oatcakes, which were delicious (should have had more, because went very low in afternoon, with stress at work)
Chicken curry with aubergine and spinach
Felt very floppy in the evening.

Today:
Coyo and tea
Tinned salmon, mayo and green salad
Pork steak with prunes, cream, baby carrots, baby corn, broccoli and green beans.
Am stuffed!
 
Mmm pork and prunes. Used to get that at a lovely restaurant in town many years ago. Delicious. As was the brown bread ice cream they did.
 
Hello I'm new here - diagnosed t2 in early October 4 months after having my second baby, after having gestational diabetes in both pregnancies. Am a fervent believer in low carbing. Today I ate:

Brunch: tuna salad with raw red cabbage, Mayo, 2 boiled eggs, spring onions, mozzarella and sundried tomatoes.

Dinner: chicken baked in mascarpone and red pesto, with wok-cooked courgette and cavallo Nero.

Thank you! I've only just joined the forum but have been reading it since my diagnosis and you have all been a great help and comfort to me.
