What have you eaten today?

Can I just ask, which nuts are ok for us and are we talking eating a pkt full or a handful?
Tablespoonful of almonds, peanuts, hazelnuts, cashews, walnuts & brazils. Because that's what's in the packet. I roast them. I only eat one brazil at a time because I read somewhere they can have a lot of selenium, which is good, but in moderation.
 
B: flax bread with peanut butter, bacon and poached eggs
L: rice, chicken and fish and veg
D: mushroom salad,Scallops, foie gras, chamomile tea

That is a great weight loss well done ...you must be proud of yourself!
As for pork versus beef ..my partner says beef are best ..for link sausage but he is scottish ...however he also loves Black Farmer ...they are great braised in onion gravy with buttered cabbage ...oh getting hungry ..better get my self out for walk with the dog before podfldng of

Slice of home made mushrooms, leeks & red onion crustless quiche, mixed veg and quarter slice of wholemeal toast. Before 5.3, 1hr 5.9 and 2hrs 4.7.

Hi there Mandingo, can I just ask...................well I'm going to anyway, this "crustless Quiche" is it a bought one and you whip the crust off or is it one you make minus the crust? If the later, any chance of a walk through recipe?:)
 
Breakfast, Flax,1 poached egg,steamed spinach, hard white cheese, olive oil

Lunch, Chicken breast, salad,Manchego cheese, olive oil, coconut oil.

Dinner, cottage cheese, flax, sour cream ,coconut oil.

Crustless quiche

Hi Adrian I took the recipe from the net and modified it a little.

Directions
Preheat oven to 350 degrees F (175 degrees C)

salt and ground black pepper to taste
a few slices of diced ham or bacon If used remember to reduce the salt (Optional )
Pinch of red chilli flakes to taste (Optional)
2 teaspoons olive oil
1 onion, chopped
1/2 teaspoon dried thyme
1 leek, white part only
6 medium mushrooms sliced
5 eggs
3/4 cup whipping cream
3/4 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 tsp garlic puree

Heat olive oil in a skillet over medium heat.
Add onion cook and stir for 2 minutes.
Add thyme, salt, pepper, leeks, garlic puree, mushrooms and ham/bacon
cook and stir until the leeks are cooked through, 5 to 8 minutes remove from heat allow to cool.

Grease a 9-inch pie dish.

In a bowl add the cream, eggs, mozzarella and parmesan
Combine the cooled mushrooms, leeks and onion with the cream, eggs and cheese using a spoon

Pour into pie dish and stir slightly to distribute.
Bake in preheated oven until top is beginning to turn golden brown and center is gently firm, about 50-60 minutes. Let sit a few minutes before cutting

WOW, cheers for that Mandingo. I will definitely try that. Gonna put the ingredients into my phone shopping list and give it a whirl probably Thursday night. :happy:

You can also line your quiche dish with slices of ham overlapping to fill gaps- gives a meat crust !!
 
breakfast turkey bacon, poached egg, mushrooms
lunch egg and tomato mayo, ham , cheese , salad , few crisps out of Mr E's big bag
snack soy latte and 1 sq dark choc
dinner keema curry with peas and spinach, 2 onion bajhias, salad and 2/3 rds of a poppadum
 
Day 1 of reduced carbs and new meds and testing before and 2 hours after meals

Before Breakfast 7.8 ..... 2 hrs later 7.7
Homemade green smoothie, made with Almond milk, 1/2 frozen banana, 5 strawberries, kale, spinach, chia seeds & flaxseed :hungry:


Before lunch 7.3 ..... 2 hrs later 7.1
Veg & cheese bake... courgettes, cabbage, peas, leeks, green beans topped with very low carb cheese sauce. T'was Divinely Orgasmic :hungry: ;)


At around 5.30 pm I felt shaky and light headed and couldn't quite figure out whether I wanted food or not because by now I'm usually hungry and eating dinner. Anyway, thought I'd check bs. To my amazement the meter was showing 5.8 :happy::happy:
I just stood there starring down at 5.8 ... on my 1st day of new meds and reduced carbs. Fantastic

By 6 pm I was hungry but not starving, so I had a tiny portion of the left over veg & cheese bake. I'll check bs later and update.

I'm not sure if the readings before and after are ok?

Any particular reason for the frozen banana?. Lower carbs etc, or just cause you like it that way.

I can only drink my smoothies REALLY COLD. I mainly use frozen fruit and frozen kale & spinach.
I find by using 1/2 frozen banana gives the smoothie a cold and creamy consistancy but 1 banana would make it too thick for my liking.
I freeze the bananas when theyre just becoming ripe, don't like them sweet.
 
Breakfast: salmon & scrambled egg with a LOT of butter on toasted home-made spelt bread without added sugar or salt
Lunch: at a restaurant with some of the family ... 2 type 2 diabetics (me & my bro), a coeliac, someone on the Bristol cancer diet, and Mrs DeeJayR the odd one out, being "normal." My brother is on the NHS diet with carbs and doesn't know what his BG is from meal to meal.
So .... he had the steak & kidney pie in a pastry case with mash, gravy & peas, and I had a three-egg omelette with salad and a few chips.
Tea: celery, tomato, cream cheese, mayo, pate, olives, more chocolate pear cake (but not all at once).

D: pizza pasta and crisps =high fasting sugars

There are times when you throw caution to the wind, know the end result but still do it and always regret it the day after. :banghead:

And presumably they must double fry the potato and onion rings.
Resistant startch is the only explanation I can think of.
And my fasting this morning is 6.2, which is 0.3 lower than average.

Does 'double frying the potato and onion rings' make 'em sort of better for us in some way?!? just curious ....but fingers crossed the answer is Yes!! :joyful:
 
Didn't get round to posting yesterday's bingeful day!!!

Breakfast was low carb.

Then went into town shopping. great so far, bought delicious raspberries from the market to enjoy with double cream in the evening
Then on the way home, we had to pop into tesco, by now, it's past lunchtime and tummy is asking for the low carb veg bake which I'd planned to eat when I get home.
Somehow an apple pie, from the bakery just happened to jump into the trolley!!! Honestly it wasn't me. :rolleyes:

So you can guess what happened next.... Yep lunch became Apple pie with fresh raspberries and double cream, followed by a second helping :eek:

Dinner was a tiny slice of pizza and loadsa salad. Tested before bedtime 10.1

Back on the low carb wagon today.
