300g nuts. I used almonds and Brazils.
40g pumpkin seeds
Handful of linseed
30g cocoa powder
50g salted butter
50g peanut butter
5 heaped teaspoons coconut oil softened
Agave syrup to taste
Ground almonds to 'dry out' consistency.
Chop all nuts and seeds in food processor.
Add all ingredients together except ground almond.
Add ground almonds 50g a time until you have a good consistency where you can roll balls in your hands and only get a little bit greasy. They are quite floppy so work fast and be gentle. Just make sure they are 'together'.
Place in grease proof paper and put in fridge for a couple hours. The above will make about 30 balls which will last in the fridge for about a month. You can get creative and add flavouring like vanilla or cinnamon.
They're very morish so keep them hidden in the fridge!

I like that quite a lotSugar? There's only a few drops of agave syrup and split over thirty balls is almost negligible. They are lovely x

Thanks, they are a bit big though. Like golf balls
Dunno. I blitzed it until it looked like wet sand. I didn't put coconut in it ...should I?Did you grind the nuts enough? Too much coconut? Mine are truffle like. X

HiYoghurt with berries and 25g mixed nuts. (12g carb)
Vegetable and ricotta frittata with salad and butternut squash chips with garlic and parsley salt. (13g carbs)
Zucchini "spaghetti" with green veg, meat free bacon (2 rashes) creme fraiche pesto and 30g cheddar. (16g carb)
1 square (12g) 81% chocolate (2.7g carb)
43.7g carb overall today so slightly over my target. Probably shouldn't have had the chocolate...but it IS Friday.
Also, did a 12 mile interval run circuit pushing little one in buggy - sugars were 5.5 when we went out and were 16 while out - had to used temp basal increase at 150% AND bolus 3 times to come down - is this normal?
