Prediabetes What spiked me?

My BG before dinner was 5.8 and two hours later 8.4. I had roast chicken, 200g roasted celeriac (for the first time), 100g Brussels sprouts and 125g spinach all liberally bathed in butter. Followed by 100g warm berries (blackberries/raspberries/red & black currants and 100g lactose-free proper Greek yoghourt and 25g creme fraiche. I thought my meal more than acceptable in terms keeping BG stable so I was disappointed that it was 8.4, I thought it would be more around the 7.2 mark. I know there's more to BG than food intake but I'm under no stress, I'm not ill, so what was wrong with my meal? Does anyone have any ideas or am I being too fussy about the 8.4 reading?
 
It could be anything or nothing. Our bodies seem to have a mind of their own sometimes.

Keep checking to see if you have a trend going.

Brussel sprouts (9g carbs) spike me a bit. Berries (14g carbs) will a little too. Not sure about celeriac, maybe that too? Spinach (7g) probably could for some as well.

But I have definitely overdone it on roasted Brussels sprouts before and realised i couldn't have more than a few. And you had several of these together. Berries, being a fruit, I only have a half cup at a time as well.

@sharonm1 did you recheck the 8.4 test at all? Maybe you still had some berry juice on your finger when you tested, as none of the foods you ate are particularly high carb.

Have you been testing your levels before this? I was just wondering whether this is your first real spike as it were

I have found as have other people that the equation is not just about the amount of carbs but the food they are in- some people can tolerate a small amount of potato for example while others can't. Yesterday I had a very small amount of flour in a communion wafer so very small but it spiked my blood sugar level. I've had a bigger amount of roast potato without that spike.

The other thing of course is that your blood sugar levels are also effected by illness, stress and other things.

My suggestion is to try those things separately over a number of meals/days and see if individually any cause a higher than expected spike.

Of course the answer could be as simple as the something on your hands as @Rachox suggested. I always retest if higher than expected and always wash my hands again if necessary before retesting.
