I made a blackberry Clafoutis this week...low carb made with almond flour...used a sweetener...it was gorgeous...puddings are entirely possible Orson...and absolutely necessary IMHB

Blackberry Clafoutis
Serves 6
Ingredients
200g blackberries (could also use raspberries or the traditional cherries)
150ml double cream
2 large eggs
100g Tesco ground almonds
100g Natural & Low Carb Kitchens inulin powder
30g Tesco unsalted butter
15g Indigo Herbs Nutrition vanilla powder (can sub for 1 Tbsp vanilla extract)
you can either use 100gs of inulin (which can have an unfortunate effect on the tum) or 80gs of xylitol or a sweetener of your choice (I used xylitol & sprinkled a little on the fruit in the bottom of the otherwise it can be quite tart)
Method
Preheat oven to 180c and butter a baking dish, place berries in the bottom of the dish
In a bowl combine eggs, almonds, cream and vanilla, melt the butter and stir into the mixture
Gently fold in the inulin
Pour the mixture over the blackberries and bake for 30-35 minutes until golden
Tip - enjoy warm with extra cream

Today is going to be a tough day. Last night my mom (90 with early-mid Alzheimer's) broke a tooth. Fortunately she has no pain but her lower plate dentures hook onto that tooth and she only has one molar left at the back on that side (and severe osteoporous which has weaked her jaw bone.) My sister and I are trying to arrange the dental service to see her ASAP, unfortunately this is a long weekend coming up here (Civic Holiday - Ontario, Canada). I'm driving to see her & picking up a dental claim form from my dad.
