Type 2 When to test

Perhaps try testing at half-hourly intervals for a period of say two hours after getting up to give yourself an idea of where your peak BGL is. Done over a few days to see if there is any consistency in peak times?
 
If you are not sure about your late meal then I'd advise testing just as you are settling down to go to sleep - it may be a bit earlier than the two hours from first bite, but it will give you a good indication if you are eating too many carbs.
 
Cheers but a different scenario I don’t take insulin I’m med free but thanks for the information
Sorry but it doesn't matter if you take insulin or not, a fasting test is still performed whether insulin dependant or med free, testing is not different just because I'm on insulin

Like others have said as long as you are consistent. I test once I'm up and ready for breakfast, as I need help to get up sometimes this will be 5 in the morning before my beloved leaves for work, other days it will be 7.30 after my carer has got me up and sorted. Then I test again two hours after breakfast, then before and two hours after each meal. I record what the results are and what I've eaten as I find that after 3 and a half years of T2 something that I've always had will suddenly spike my BG so I know to avoid it for a while and then try again after a week or so.
