Which bread?

Many people on the forum cannot tolerate bread at all as they find it spikes. I can have a small slice of Burgen Soya and Linseed under my scrambled eggs, they also now do a loaf which also contains Chai seeds which are also meant to be good in helping Diabetics. The best thing to do is to try and test. Best of luck!!!

If you can tolerate gluten then make your own high fibre, low carbohydrate bread. Looks and tastes like hovis but doesn't toast too well.

You could try making your own, I do and it and it works out at about 8.6 g carb a moderrate slice.

100g bread flour wholemeal is best.
100g Wheat Gluten (from "Breadbin")
100g Soy flour (Holland and Barrat)
Flax seed and sunflower seed.
2 tsp of dried yeast
1 tsp of sugar.
A squirt of lemon juice, about a dessert spoonful.
A glug of oil.

Mix it and make it like any other bread, a loaf should give 15 slices, if not it hasn't risen enough!
All my own work!

EDIT It makes wonderful toast!

This sounds good but is a glug of oil and a dessert full of lemon enough to moisten the 300g (total) flour?

I'd say none. I'm wheat intolerant so can't. Don't really miss it or the carbs it comes with.

Hi D-ED

Burgen's bread is available at my local Sainsburys and I guess that other supermarkets may stock it.

Regards

Doug

Burgen now do a smaller half size loaf which has smaller slices that the standard sized loaf... :)

I keep mine in the freezer and "chisel" off a slice whenever I'm feeling brave...
