Which oils and fats do you use and why ?

Ghee should keep way longer than a month. In India you can buy 100 year old ghee. I was thankful that my mother didn't buy me any though!
 
Sid, it's probably not the fat, if you're doing LCHF, it's more likely to be the milk proteins in the cheese. Cheese is generally zero carb or extremely low carb but milk protein does cause insulin to rise.

I believe it to be the calories in cheese, ie. 9 cals per gram which is double the cals in carbs or protein. And as I have said many times I have never added extra fat to my diet but on the few occations when I have by eating cheese every night for a week I do.

I lost 5 stones and have maintained that weight loss now for 5 years the only times I put weight on is when I add fat ie cheese to my diet or maybe if I drink more than the glass or two of wine a night that I often drink and again the cals in alcohol can be high.

When I lost weight I drastically cut the amount of food that I put on my plate and also reduced the carbs so in effect I did increase the ratio of fat in my diet even though I never added any extra fat at all. So a lchf diet doesnt have to mean adding extra fat at all simply by cutting carbs you will automatically be eating a higher ratio of fat, basic maths.

IMO by adding extra anything especially fat thats is weight loss stalls or even increases.
 
That's why it's called Low Carb High Fat, not Low Carb Extra Fat :-)

Just bought Spectrum Naturals organic all vegetable shortening from Amazon. It's American, 9.99 for a 680g tub and doesn't need storing in the fridge.

Upon close inspection, it's actually organic palm oil which remains solid in our climate rather than a mix of fats or oils and it non hydrogenated.

I'm just confused and wondering why you label a natural oil, as 'vegetable shortening'.
