I am doing my very best to stick to the LCHF way of eating as I have proved to myself that it works for me, so why is that I get the odd day where I succumb to the call of carbs - there I was doing fairly well and blood glucose readings staying within the 5.5 to 8.0 range and feeling good then along comes last night and I give in a eat chips................. not a huge amount and reading 11.5.
I just don't understand why I do it!
I am hoping it is just a learning to live without process, I go without pasta and bread without a problem but potato and rice I really struggle with and to some extent I can eat potato as long as it is only a very small amount.
I tried the cauliflower rice but it really did not work for me - I still missed rice and I found the cauliflower did not sit well after I had eaten it - but I eat it as my veg option and thoroughly enjoy - just the rice option did not work.
Sorry I know we are all different and we all have to find our own way to what works for us - but thought someone might be able to shed some light on why.
