Hi,

This is the first really cold spell since i was diagnosed. my carb intake has gone up big time this weekend and so have my blood glucose levels. i've struggled to stay feeling full on foods i was eating even last week. i think i need summer and winter menus. heavy snow forecast for here tomorrow.

Good hearty soups and stews are good for that warm winter feeling and you can add whole grains like barley for a slow release. If you're not having to worry about the fat, lamb and barley stew is perfect. You don't need much lamb by the way. The barley with chunky veggies, leeks, onions, carrots, celery, turnip, a good stock is already nice. A small amount of lamb is just the icing on the cake if you'll pardon the sugary pun.
 
As yorksman said, stews and soups are a great (and potentially low carb) way to stay full for longer. I helped out with testing the recipes for the diabetes cook book and they kept me full for a very long time.

Stews and casseroles and thick soups are good this time of year.

If you can tolerate gluten, this is a good dumpling recipe, they turn out light and fluffy

250g Ricotta cheese
1 small carrot, finely grated
finely chopped parsley
2 eggs
salt, pepper, pinch of grated nutmeg
130g almond flour
70g gluten

Mix all together to form a firm dough, shape into dumplings, you will have enough for 10, place in a pan of VERY SLIGHTLY simmering salted water (or add to slightly simmering stew/casserole/soup but be careful, they must not boil), cover with a lid and leave to steam for about 40 minutes.
