Vegetarians: What have you eaten today?

Banana, followed by 2 slices of toasted wholemeal bread and butter.
For Lunch - 2 slices of toasted wholemeal bread and butter.
For Evening Meal - Cheese & Onion Quiche (shop bought) and home made Savoury Rice with: Celery, Onions, Peas, Grated Carrots and Mushrooms with Basmati Rice. Not yet had my low fat yoghurt! What have you eaten today? Liam
 
B: flax/psyllium toast with pesto
L: chilli/garlic coconut flat bread with mushroom/tempeh pate & cheese
D: vegetarian chicken salad with chipotle aioli & avocado

Lunch. Carrot & Coriander Soup.
E.Meal. Brie, Grape & Red Onion Chutney Sandwich.

Is this not a little high in carbs ?

O edit to add ... You are usin insulin..so can adjust your carbs to match your insulin ....yummmmm

Yep. I know soy is somewhat controversial, particularly the processed stuff, but sometimes the belly wants what it wants! We tend to eat more of it in the warmer months as we eat a lot more salads & obviously potato/pasta/legume/pumpkin salads are pretty much off the table so frankenchook or soysage it is :) Marinated tempeh is on the menu too but is not quite as quick or convenient.

D: another 'bitty' one - spinach puffs, cauli tots, crudite, hummus, avocado & some garlic/chilli/cheddar almond bread

D: Brie, Grape on 2 bread rolls. Followed by slice of Morello cherry pie with sugar free custard.
 
Ooooohh - scones! Might do a search for a low carb version :)

D: planning to have more carrot/cheese/parsley salad (good thing I like it - I made a tonne) with heaven-knows-what-else

Had a couple of spanakopita triangles with a well dressed salad last night & no major spike so happy with that - must've been all the fat from the cheese, butter & olive oil!
 
Salad made with, Italian leaves, cucumber, red opinion, yellow bell pepper, kiwi fruit, grated carrot
Cauliflower bake
 
B: 1 Banana & small of Cranberry Juice. (sugar free).
L: 2 slices wholemeal bread toasted with butter.
D: Cheese & Onion Pasty, Pasta Salad.
10.30pm: Handful of Walnuts.
 
B: 2 fried eggs 2 Quorn hot dogs and a flat mushroom
L: Konjack rice with Quorn chicken pieces 40g, courgette, spinach and mushrooms in a spicy tomato glaze.
D: avocado with egg and mayo

Snack: 5 or 6 Brazil nuts, a couple of slices of cheddar.
 
B: 1 Banana.

D: Homemade Cheese & Onion Quiche with Pasta Salad.
1 Mince Pie and 3 Shortbread Biscuits (had a friend visit).
 
Yesterday - 23rd Dec.
B: 1 Banana, 2 slices wholemeal bread toasted with butter.
L: 2 slices wholemeal bread toasted with butter.
Afternoon: slice of carrot cake.
D: 3 toasted trumpets and baked beans.
 
Yesterday. Best Christmas dinner ever!! All lower carb versions but great tasting.

Starter:
Lidl roll crostini topped with baby button mushrooms in creamy tarragon sauce

Main:
Quorn family roast with gravy
Quorn pepperoni pigs in blankets
Wensleydale and walnut cauliflower cheese
Braised red cabbage
Roasted orange coloured cherry tomatoes

Pudding:
Gingerbread, lemon curd and raspberry chambord sauce trifle

Drink: champagne and cava. Found a driver!

Snacks: homemade 85% chocolate bark topped with toasted hazelnuts, dried cranberries, lemon zest and sea salt

I didn't test before and after, but a random evening test was 5.7 so happy with that. Hope you all had a great day and have some yummy leftovers for today :D

L: 2 slices of wholemeal bread toasted with butter.
D: starter: Advocado, Melon Balls and Rocket salad.
main: 2 Yorkshire puddings, 3 stuffing balls, roasted carrots, parsnips, potato and sprouts.
Pudding: Christmas pudding with brandy double cream.
