Vegetarians: What have you eaten today?

B:apple slices, plus peanut butter
L salad veggies + small slice of carrot cake (welcome cake for new staff member)
D: chickpea lightly cooked veggies, courgettes, peppers, onion mushroom.+ 40g of pasta
 
Brunch: toasted Lidl roll with peanut butter. Lots of tea
Dinner: sliced courgettes in creamed cashew and red pepper sauce. 85% choc.

L: maroccon chickpea pie
D: 2 x fufu sausages mixed steamed veggies with garlic
 
yesterday

B: yogurt and flaxseed
L: cucumber, olives, cheese
D: lots of veggies (broccoli, cauliflower, green beans) and scrambled eggs

thankfully no carb laden table at the PTA meeting!
 
Oops forgot about pudding which was a couple of massive yellow sticker strawberries drizzled in 85% choc.

What was in the chia recipe? Maybe you could change the berry to nut ratio to make the bg rise more gentle. Or try eating it later in the day. I find I can't eat many carbs for breakfast as my well meaning liver usually starts my day off higher than I would like. I can tolerate more carbs later in the day.
 
Yesterday I was the same as the day before but with lidl roll toast and peanut butter for lunch.
 
Boring food day

B: full fat yogurt with ground flax seeds and cinnamon
L: cucumber, cube of cheese, teaspoon of hummus, few olives, few nuts
D: scrambled eggs and veggies (family had gorgeous smelling pizza :()

plus lots of black coffee :)

Do you ever make your own gorgeous smelling pizza? Lidl roll, roast veg, cheese, herbs. It's brilliant!

I do use the lidl rolls sometimes for a pizza or cheese on toast, also tried making a pizza with cauliflower base which wasn't so successful in terms of looks but tasted OK.

I value my toes more than I desire high carb foods but sometimes the smell of the families foods makes it tough, much easier when they are eating stinky meat stuff - definitely don't want that :)

Will have to plan ahead and get a lidl roll for next "pizza night" I always seem to forget until the smell of pizza wafts out of the kitchen :banghead:

Dinner: veg and chickpea red Thai curry, coconut lime caulirice, cucumber and cashew salad, poppadoms with spicy soya yogurt dip

Dinner: curry night leftovers (warm)
Snack: cashews

That's what I call good variety.

L quineo salad with a bit of expensive bought almond cheese turmeric and cumin flavour.
S: peanut butter!
D: hm made bean burger, on filed mushroom wiht avocado and salad

sorry am in New Zealand and its this organic wholefood shop that make it themselves it was quite exquisite soft but not crumberly
