Been away camping so food was all over the place and my BG up a bit, but on the whole getting back into the swing of things, I still find it great to see what eating, I do find it hard loving cheese, but it does not agree with me!
anyway
B almond/coconut milk blueberrie shake - one spoon protein powder
L: Quinoa Salad with a few chopped up walnuts
S:veggie samosa!
D: black bean mushrooms with large green salad
S2!: crackers and cheese
The black bean mushroom is simple and easy to use can make 3-4 portions - light cook onion, pepper (capsicums) finealy chopped cook in a little bit of water, stock oil etc add in 1 tin of black beans (drained) lightly mash with back of spoon still want some to keep their shape then add 1 spoon of tahini, salt pepper chilli flakes dash of lemon or lime juice. then spoon onto large flat field mushrooms and top with a few chopped nuts of your choice then grill till nuts are lightly toasted. (I pre part cook the mushroom) the left over I pop in the fridge can keep up to a week

@rosieshe That recipe sounds great. My daughter (non-diabetic veggie) has recently gone off the idea of dairy and I think she would like that. We are trying a new courgetti sauce recipe tonight. If it is good, I will pop it on the vegan thread.

Brunch: soya decaf
Dinner: courgetti in sun-dried tomato pesto with roast veg and toasted flaked almonds
Pudding: coconut chocolate fudge
Snacks: been quality testing the fudge throughout the day for the sake of science o_O

B: scrambled eggs
L: cucumber, olives, teaspoon of hummus, cube of chees
D: ate out starter: salad (lettuce, cucumber, olives Main: cauliflower cheese and green beans no pudding

Why is it that when I go out to eat with a group of women the waitress ALWAYS brings an extra spoon even though I have clearly stated I do not want dessert (other s always have enormous ice cream sundaes).

Yesterday's = 6/2/16.

B: Latte.
L: Latte and slice of Homemade Sponge (buttercream/jam filling).
D: Homemade Sauce of Chopped Onion, Celery, Red (capsicum) Pepper, Herbs, Veg Oxo, Tomato Puree and tin chopped Tomatoes over bed of Basmati Rice.

Dinner: curry (Tesco red Thai paste, coconut milk, chickpeas, cashews, sugar snap peas, red pepper, mushrooms, spinach)
Pudding: coconut chocolate fudge

B: full fat NAS yogurt and flaxseed
L: cucumber, olives, cube of cheese, teaspoon of hummus and few nuts
D: roasted cauliflower and cheese, square of 85% dark chocolate

Today - 7/2/16.

Had lay in till 9.15am, took Insulin later than 'normal' - b.s. was 6.3 at 9.30am so I did not have anything to eat only glass of water for breakfast, and took rest of my other meds
L: Latte. (This is a sachet and I just use hot water to make it).
3.45pm - Started going hypo my b.s was 3.7 so I ate 4 choc digestive biscuits and brought forward my dinner*
D:* same as yesterday's.

B: leftover black bean tahini thing wiht 2 new pots and 1 egg scrambled in it
L: egg salad loads of green
S: spoon of peanut butter
D: brown rice pasta with home made cheese free pesto, plus lightly steamed mushrooms and big green salad

This is a forum for vegetarians .. So please no meat references ..
A Vegetarian is someone who lives on a diet of grains, pulses, nuts, seeds, vegetables and fruits with, or without, the use of dairy products and eggs. A vegetarian does not eat any meat, poultry, game, fish, shellfish* or by-products of slaughter.

L: quark with blueberries and mixed seeds
D: leftover curry with a quorn peppered steak

No snacks yet, but thinking of making some low carb lemon curd for pancake day tomorrow. I could very easily scoff some of that later.

yes if I made the lemon crud I would scoff the to hence I have to limit my cooking

L: salad with halloumi (local independent restaurant that makes a stunning low-carb veggie salad)
D: low carb pancakes made with almond flour, three with extra strong cheddar cheese and two with 1/2 square 85% dark chocolate soooo yummy!!

gosh mine is going to sound so boring compared to pancakes

L I tried that cucumber salad someone posted and added red onion, 1/2 tomato and made some flaxseed crackers - yum
S: small handful of almonds
D: tofu based sausages (bean supreame) 1/4 avocado, courgettes, 1 mushroom, fresh spinach, mustart, spot of mayo all stuffed into a pita bread
