Low carb flax bread.

I just made this. It's not bad and less than 10 carbs for the whole loaf.
It's not very high so I'm going to try it next with a smaller but taller tin.
Would anyone like the recipe?

Recipe.
Most of the carbs were from the flax. Mine was 4g per 100g. If you use lower you can get this at 5-6g for the whole loaf.
I merged about 3 different recipes that I found.

2 cups flax.
1 tbsp baking powder.
1 tsp salt.
1 tbsp truvia sweetener.
1 tbsp Italian herbs (can use more or leave it out).
5-6 eggs (I used 6 medium).
1/2 cup water.

Mix all dry ingredients together.
Blend up the eggs.
Add the water and eggs to dry mix and stir well together.
Leave for 3 mins at least to thicken.
Pour into your greased / lined etc tin. I used a rectangular silicone mould and didn't use any grease.
Bake at 180 for 30 mins.

Does it taste as good as it looks? I feel a bread session coming on!

It has a slightly nuttier taste than bread but is really nice. I had a bacon sandwich this morning and then ham sandwich for lunch hehe.

I couldn't find it either so have used ground almonds instead in other recipes. It seems to do the job!

However, if anyone can find it, I'm sure it's DUK's answer to Paul Hollywood - @RobPL !

Oh I've never tried almond flour. I have seen it said though to just use ground almonds as Pink says. You can get them in any baking section in a supermarket.

For flax, I've had some from Holland and Barrett and also from Tesco. It's just over £5 a bag in Tesco but it's massive and will last a good while.

Bear in mind, as in the pic the loaf came out very low so either use a mini tin to force it higher or possibly try extra baking powder.

The flax in Tesco is 3g per 100. The one in h&b is 4g.
In my local Tesco it's in the baking aisle but with the free from stuff.

OK, here's a daft question - I believe flax seeds and linseeds are the same thing, but your loaf doesn't look "seedy" - did you use ground seeds? I'm going shopping for the baking session!

Look for ground or milled flax seed which will have a fine-ish texture. Be careful about storage as apparently it can go rancid and get a fishy pong - I've not had this happen yet but others have.

Sesame flour also gives a nice fine texture - I make muffins savoury from this which cut in half are great toasted - I do cheese on toast this way. You can also use these for bacon butties with the bacon fat as "dip".

Aha - might have found my own answer - I think you used milled flax seeds..?
