The chickpea balls are awesome. Very savoury! Thank you HP. I used an ice cream scoop so that my hands didn't get sticky making them. Still no whole courgettes up here, only spiralised ones.

I was diagnosed with type 2 diabetes 16 years ago. Over the years my HbA1c has been slowly rising from 48 to the highest of 83 last year. I followed the advice given by the DN to eat carbs at every meal... I now realise that this was so wrong.
I’m a vegetarian, need to lose weight and bring blood glucose down. I’ve no idea where to start. Is it possible for someone who doesn’t eat fish, meat or eggs to go low carb and lose weight?

Your ahead of the game if you like to cook. Sounds like you have some good ideas already.I like to cook meals from scratch, been a vegetarian all of my life but my meals have always been based around high carb foods. I use to eat high fibre cereal, cheese salad sandwich, jacket potato, baked beans on toast, homemade curry with vegetable rice or a cheese and potato bake.
Over the last few weeks I've completely removed bread, cereals, potatoes, rice, root vegetables from my meals.
I've also been diagnosed with IBS for many years and then 18 months ago Inflammatory Bowel Disease so my diet is super strict. My digestive system can't cope with any fruits or salad or uncooked vegetables. I use to snack on nuts and seeds but they have to be ground up now.
I feel like I need to reduce the carbs to get the blood sugars and weight down and start eating healthy vegetarian foods for a change.
I've discovered chia and flaxseed sort of porridge made with whole milk or coconut milk with turmeric and cinnamon. Halloumi and courgette fried in a little butter. Chickpea flour omelette with grated courgette and cauliflower. Spinach and paneer curry but not sure what to have with the curry instead of roti or rice?
