Vegetarians: What have you eaten today?

@Rose88 Eat loads of carbs and don't test? :rolleyes: Time for Plan B!

Do you like/can you eat avocados?

Lol I'm looking forward to plan B! :) Thankfully we have a couple of new nurses at our practice now so I saw a different nurse last week to have my 3 monthly bloods taken and she has a much better approach than the previous one!

Yes I can eat avocado,s, yogurt, soft cheese like mozzarella, all lentils and pulses.
 
I like to cook meals from scratch, been a vegetarian all of my life but my meals have always been based around high carb foods. I use to eat high fibre cereal, cheese salad sandwich, jacket potato, baked beans on toast, homemade curry with vegetable rice or a cheese and potato bake.
Over the last few weeks I've completely removed bread, cereals, potatoes, rice, root vegetables from my meals.

I've also been diagnosed with IBS for many years and then 18 months ago Inflammatory Bowel Disease so my diet is super strict. My digestive system can't cope with any fruits or salad or uncooked vegetables. I use to snack on nuts and seeds but they have to be ground up now.

I feel like I need to reduce the carbs to get the blood sugars and weight down and start eating healthy vegetarian foods for a change.

I've discovered chia and flaxseed sort of porridge made with whole milk or coconut milk with turmeric and cinnamon. Halloumi and courgette fried in a little butter. Chickpea flour omelette with grated courgette and cauliflower. Spinach and paneer curry but not sure what to have with the curry instead of roti or rice?
Sounds like you have great ideas and experiences to adapt :)
I sometimes do more medium carb , but Thai size portions of rice these days , and spelt bread ..or healthy choices ..
I do have the cauliflower rice to x you are more than half way there in implementing your changes ..

B. Chia & flaxseeds, turmeric, ginger, cardamon, nutmeg and cinnamon in coconut milk .. delicious and filling and soothing for the tummy
L. homemade daal with 1 small slice of warburtons wholemeal bread (9 gms carbs) with butter ..
D. the daal is yummy so will have this for dinner too maybe with 1/2 an avocado

I think it maybe difficult for us vegetarians to go low carb so I might have to go mid house too. I've started eating healthier and Im still in the trial and error stage of how much carbs and fat to have to enable me to lose weight and bring sugars down...

Hi @Rose88 i do medium with eveything to suit me ,. :)
I have lowered carbs but not stopped them ..
Mid house is a good place , once your sugars come down and you loose weight it gets really exciting ..
But still a fine balancing act ..I find .. still it's good to have a. Challenge .. lol. I do like a bit of good humour in my health x

Between you and me, I think it is easier for vegetarians to be diabetic. Imagine you are an omnivore and are told you now have type 2 so will have to read labels on everything you eat, avoid whole aisles in the supermarket and be disappointed with restaurant menus. Sound familiar? lol That is how we live anyway so it is not such a big lifestyle change. Every cloud.

As with all ways of eating, it is about balancing your carbs/fats/proteins regardless of which kingdom those foods come from. I think you are doing really well and already have a wide variety of foods you can eat to keep low carb eating interesting and sustainable. I wont win any medals for being super-low-keto, but I can live with that! :cat:

Ive just had a light bulb moment :D

Whenever Ive read about the benefits of low carbing I've always associated this with Very low carb Non veggie foods but have just realised thats not necessarily the case.

Its a whole new way of life, making changes here and there and once I've got my head sorted I should be on the road to success :happy:

Being a weirdo has its advantages too. I don't tell people at work that I have diabetes. Today it was cold and snowy so the boss brought us in pizzas at lunchtime to thaw us out. I don't get offered pizzas because I don't eat cheese - I have high carbfest immunity and they are none the wiser. Works on cake days too :D

Brilliant! People might associate low carbing with cavemen and Atkins, but it doesn't have to be that way. One thing many agree on though is that the Eatwell Plate is not appropriate for anyone who can't eat loads of carbs. Shame you got off to a bad start, grrr, but you're here now. New chapter for you x

Usual oats , almond milk and blueberries

Two coffees out :)

Tonight is the same as yesterday
Cauliflower cheese and leaks ..with one roast potatoe and assorted veggies ..

Alpro ice cream
No chocolate to day .. all gone lol x

Fruit later I sleep well with a bit of fruit x well I mean I don't actually sleep with the fruit :***:

I only told my boss when I was diagnosed in case I keeled over from diabetes or something :nurse: I didn't know much about it. I don't feel it is anyone else's business. One woman at work recently described a relative as having diabetes - "the type you get from having a bad lifestyle." Aye right, get back to your cake :rolleyes:

My family know, but I have lots of Tupperware so it doesn't affect them much.
