I miss pizza!

Hi All

Been a member since Nov 15 but not been active on the forums.

Just want to extend my appreciation to the website (and the contributors) for giving me the tools with which to deal with my T2 diagnosis (Sept 15, hba1c 76, weight 84kgs). Initially I was obsessively following lowish carb, low fat diet and spent most of the time hungry. Now that I've discovered fat is my friend, its easier. At my last quarterly check up my hba1c was 39 and weight 74kgs (but trying to gain a few back if I can). I'm very careful with the carbs but not afraid of fat and it seems to sate my appetite...either that or my stomach has shrunk in past 18 months.

At 6' 3" I was not overweight at the outset but my mother, father, brother and a great deal of my paternal relations are/were diabetic, so I guess the genetic marker is strong. Such is life.

Anyway thanks again for all the pointers and cross fingers I'm on the right track. I just wish I could have the occasional pizza, ice cold larger and gelato but I'm too frightened to put the next hba1c in jeopardy. The fear is strong!

Try it and test ... like's a bit short not to attempt the occasional treat, though a slice or two (or 3) should be the limit. Much depends on the toppings as well. I loved salami. It didn't love me back
 
Fathead pizza - I don't miss pizza as I never ate much of it but if that is what you crave then you can make the fat head version.
 
I'm not low carb, but another option - use pita or similar flat breads/wraps as the base... very crunchy, I actually prefer it
 
IMG_0723.JPG I never make "lookie likie" foods - I do make cauliflower rice but to me its grated cauliflower not rice BUT my main exception is the fat head pizza - if you miss pizza you will love love love this - it's so like the real thing and easy to make - Google fat head pizza and you'll get loads of recipes - a pic of the first one I made - we call it convert pizzza in our house lol

That looks really good but I think I would leave out the high calorie cheese base and serve it on a plate. Note that plates are not digested and do not affect BG.

Have to say I don't eat all this myself and it lasts a couple of days - it's very very filling because of its high fat content

2 of us got 2 Main meals and enough for me 1 lunch from this size pizza
 
I'm definitely going to try FatHead Pizza! I really don't like the idea of prepping two different meals, one for me and one for the rest of the family so this looks like one meal we can all enjoy. Many thanks.

My husband, who is not diabetic, absolutely loves fathead pizza - says he prefers it to the 'real thing' and especially likes it cold in his lunchbox for work the next day. I like experimenting with all different kinds of toppings.

You can also roll out the fathead dough a bit thinner and bake it crisp for crackers, cheese sticks, quiche pastry or for wrapping around cooked sausages and then baked to make a kind of sausage roll. Somewhere or other there is a list of stuff you can make with this pastry but I can't find it - I think @maglil55 might be able to help with this.
 
Fathead looks good and thanks for the pictures. Don't get a lot of time to follow complicated recipes but will give it a whirl if relatively simple.

This is a fat head pizza I made, I have coeliac disease, so this was a good alternative. I was never a big pizza lover anyway, but this, occasionally, is the next best thing and make it to choice of toppings.

looked at in miniature the pizza looks a little like your dizzy and dory which every time I see it looks at a distance like intestines - I really must get my eye sight tested again :)
