Well Parents and Kids lasagne really! Hubby is happy to eat low carb food. Since my diabetes diagnosis I haven't eaten pasta but my kids were missing lasagne. I made one last night normal one side, but used butternut squash the other side. A quarter portion of this dishful from the squash end was 25g carbs instead of around 55g for the pasta end, it tasted just as good if not better! I just used Tesco white and red lasagne sauces, beef mince and some grated extra strong cheddar on top. The butternut squash and lasagne sheets cooking times are similar so it worked well Oh PS. Blood sugar from first bite to 2 hours after only showed a rise of 0.1mmol/l
