His and Hers Lasagne!

2017-08-16 09.57.26.jpg Well Parents and Kids lasagne really! Hubby is happy to eat low carb food. Since my diabetes diagnosis I haven't eaten pasta but my kids were missing lasagne. I made one last night normal one side, but used butternut squash the other side. A quarter portion of this dishful from the squash end was 25g carbs instead of around 55g for the pasta end, it tasted just as good if not better! I just used Tesco white and red lasagne sauces, beef mince and some grated extra strong cheddar on top. The butternut squash and lasagne sheets cooking times are similar so it worked well :happy:

Oh PS. Blood sugar from first bite to 2 hours after only showed a rise of 0.1mmol/l

Leeks make decent lasagne sheets too. We do something similar with the very rare time only Mac' 'n' cheese will hit the spot for MrB. We have half MnC and half cauli cheese.

These days it'll be two dishes, since having to go GF. It doesn't take much for the sledgehammer effect to come into play.

Oh well. It could be a whoooooole lot worse. :)

Thanks for those suggestions. I haven't had cauliflower cheese for years, but I do like it!

Wanders back to my post and thinks Tony337 needs to rephrase his comment to "I THINK lasagne, cauliflower, butternut squash, courgettes and aubergine are disgusting"!;)

Thus mince with cheese slices... problem solved.
 
I make a veggie version with fried courgettes layered with tomato and onion sauce and mozzarella, topped off with Parmesan. Delicious - even for a dedicated carnivore.

Never thought of putting both on the same dish. Clever !
 
It's actually a vegetable lasagna with aubergine replacing the pasta at my end of the dish. Definitely not slop, it's delicious and a family favourite, although it wouldn't appeal to those who unfortunately don't appreciate the vegetable.

Please don't think I was being rude about your or anyone elses cooking abilities and/or eating habits.
I am a fussy eater and a coeliac and am actually envious of people who have a much wider menu than me.
Which is just about everyone!
My post was supposed to be good natured and I would be genuinely upset if I thought I had waded into a post and upset the applecart.

No problem! Although if it had been a criticism of my wife's spaghetti Bolognese ( with courgetti in my portion) it could have turned ugly!
 
This isn't lasagne, and is not meant to be, but it hits the same sort of spots with me.

I make a basic bolognase sauce, but never using a jar, as I like to know exactly what's going in my food - so mince, garlic (lots), chopped tomatoes, an onion, herbs and seasoning. Then blanch large white cabbage leaves and drain - they should still have a bit of crisp life in them. Beat some eggs, add lots of grated cheese and season. Use the bolognase sauce, cabbage and eggy sauce to make the layers, then bake for 45 mins to an hour and a quarter or so. depends on oven etc, at same heat as you'd do a lasagne. The egg sort of puffs up and solidifies, and it is delicious.
 
I laid on a buffet once.............
but squashed the quiche
