As an insulin user, my protocol for alcohol is to test before I start, if I’m low and not drinking wine I have a snack, especially if I still have insulin on board. If I’m a tad high I drink with no snack and I drop a bit. No insulin. Of course this all took testing.

Forgot to add. I make a stupid little trail mix with happy hour. One big butter roasted pecan, one large Mac and three dark choco baking pieces/ bits . Love it.

I keep forgetting about olives as snacks instead of nuts. I LOVE Trader Joe’s green ones in just water and sea salt. Not brined. They taste like butter

Nightshades are potato tomato eggplant and peppers. Worst foods for aches and pains. I know, all too limiting but I treat food as energy and eat what makes me feel good. Pian and suffering don’t work.

I studied nutrition for years before D and feel beggrg than 25 years ago. To me, it’s just food. I like it all so I eat what works and skip the rest.

Hi Kristin251 Got a choice of drinks in front of me your on vodka I'm trying gin with lemon and diet soda water and a raspberry fruit tea which do you think I'm drinking, since Grateful gave info on wine thought about it and has your on vodka I thought I'd try gin. Well I have to try something and two bottles of Rose wine and a bottle of gin have been staring me in the face since summer this year so here goes. If BG goes up I'll work on the wine and take the rest of the diet has it comes, at least I'm not stressing about it now, many thanks to you both you have both in your own way set my mind to rest.
I just have gout so wouldn't like the stones you two have had, gouts painful enough! Wow this gin and tonic with fresh lemon juice in it is sooooo good. Kathleen

Ah oh. Watch the tonic. It has loads of sugar. You could try diet tonic? Wines should be dry, aren’t rose sweet? I used to LOVE vodka tonic but the tonic packed pounds on me. Then the diet tonic upset my stomach with artificial sweeteners. Hence the vodka water with lemon these days.
BUT, glad you’re enjoying it! It too will put your mind at rest haha.

@Kristin251 I had the recipe you gave me for roasted brussel sprouts and tweeted it a little i added smoked bacon bell peppers ( I know) but I'm trying out foodstuffs I've always had, added garlic carrots and roasted them in oven Wow what a difference roasting does to flavour of sprouts especially with the smoked bacon we all loved it so ThankYou very much.
I'm totally relaxed about foods for my gout spoken to pharmacist at weekend about it an she feels has I've lost 4 stone in weight cut back on protein and dairy and am drinking more water, not turned to booze yet! She feels I could well have done enough to have subsided the gout, so I will give things a try and stick with the changes I've made all ready and see how things go.
Anyway enough about me how are you getting on I've seen Grateful online but not seen you on, hope your keeping well drop a few lines on forum and let me know? Anyway look after yourself and hopefully I will speak with you again. Kathleen

Hi just remember you should put sprouts on in January and simmer gently for 12 months and they will be the right texture for Xmas. They are ready when drained and go straight through the sieve. They won’t cause any wind!

I’m glad you enjoyed them! There’s many additions you can add but roasting is the key. It does make a huge difference. Asparagus as well. Actually any veg haha. Garlic is always good! I can’t eat fresh garlic but my garlic oil is even better than fresh. And browned butter works well too.
I hope your gout is better. I feel the same about my stones. Ditched the big offenders of spinach, dark leafy greens, sweet potato and less nuts. I try to drink more liquids but I don’t like plain water and too much lemon juice gives me cancer sores. If it’s not one thing it’s another! I just sip seltzer and broth all day.
We cooked two big birds this weekend and more left in the freezer to feed us lunches through the year. I can’t find organic anywhere other than holidays so we hoard them and cook as needed. They’re much cheaper now too.
Big plans for thanksgiving? We’re having turkey of course, mushroom gravy, sprouts and salad. I’ll make rosemary roasted sweet potato for hubby. Then off to the casino, then back for more turkey. He’s much more of a gambler than me but neither of us spend a lot. I’d rather shop haha

Kids are gone now but I used to cook for 12 every thanksgiving and Christmas. I welcome the peace now haha

I was buying organic store bought broth and just added a little ghee and sea salt but now I have the real thing. It won’t last long.
Just take the bones and throw them in a pot, cover with water and simmer about an hour or so. OR if you want a richer stock, rather than broth you can use a slow cooker and simmer on low for 24 hours. You can chop the bones, or break them to reveal the marrow and cartilage etc and draw out more nutrients. Either way, after they’re done cooking, strain the bones out and refrigerate overnight. In the morning there will be a fat layer on the top and just remove that with a spoon. After I remove the bones I strain the broth through cheesecloth before I refrigerate as then I have a nice clear broth.
If you make the stock in a slow cooker a touch of vinegar or lemon juice can be added toward the end to bring out more nutrients.
You can add veggies or celery or herbs if desired but I don’t.
Store bought of course is much easier but I wanted to get the most out my pastured organic bird and leave nothing to waste haha.
Enjoy!!

Hi Kristin251 your a mine of information many thanks will try but I rarely buy full chickens I use packs of chicken breasts instead, you sound in the same situation has myself but my kids have grown up kids and their boyfriends, girlfriends wives husbands of my own kids, and so on, you get the picture. I usually do a buffet in the evening at Christmas but we down sized about 18 years ago to a small bungalow so it's full to bursting when everyone turns up. Thankfully it's only once a year, we keep saying this year is the last let someone else do it,but here I am already buying in for it again. Nice speaking with you take care. Kathleen

I don’t remeber the last time I bought a whole chicken. I too buy breast, thighs or tenderloins and cook a large amount at once.
I only buy whole birds at thanksgiving and Christmas as it’s the only time I can find organic unpolluted. We bought 3 organic and 2 butterballs and 3 breasts haha. We eat then all year long and they’re much less expensive now and we have the freezer room so why not. My husband eat turkey or chicken everyday for lunch. I need so,e tuna, salmon, lamb, shrimp and beef mixed in there. Since I don’t eat a lot of food I feel I can indulge myself on good turkeys.

But we are just so glad we still have them and we just have to get on with it. Do you have any pets? Kathleen

Yes, holiday shopping is one for you and one for me. Lol.
The expenses you have are not fun expenses so of course we have to live a little through cloths and jewelry, shoes, handbags etc as we cannot live a little through food.
I used to LOVE to cook and people always go on and on about how good my food is. If I didn’t believe them, the fast that there’s never a single crumb of anything is a good sign. Now the least amount of time in the kitchen the better. I loved yoga too and the big D stole that from me too so shopping it is!! However I can only do so much of that too.
We had a dog but had to put him to sleep. He was a rescue dog and we had him for over 15 years and he was full grown when we got him. We aren’t getting another one as I doubt we could find one as good as him.
Back to work!

I’ve owned my own business for over 30 years as a hair designer but I’ve also been an emergency medical technician on an ambulance, sold real estate, bartended and owned my own interior design business. So I’m all over the place lol. And let’s not forget a mom of 3. 2 of mine and a step son. My daughter got married in April and I think my son found the one. At least I hope so. I love her. She has a 3 year old and they send me text pics and videos and I want him to be my grand baby. He’s so adorable.

Got my brussel sprouts and sweet potato ( for hubby) to roast tomorrow. Turkey and gravy are done. Still contemplating asparagus but it’s just the two of us.
