Eat vegetables

There is no doubt that eating vegetables is very important, but I wonder which method is better cooked or otherwise
 
You keep more of the nutrients by eating them raw, but a salad doesn’t really go with a roast dinner!
I’m currently enjoying raw cauliflower and broccoli in place of salad with some meals.
 
I have read that eating vegetables with their skin is very important for diabetics

Because the crust is the substance of the fiber

Very important for glucose uptake process
 
I doubt that eating vegetables is very important!
Let me tell you that refraining from eating carbohydrates is not recommended
Problem in quantity
50% carbs
35% fat with saturated fat 1/3
15% protein

I have never been a vegetable lover, and if I were told to eat loads of them every day in order to beat diabetes, I would give up immediately! I eat the ones I enjoy, in quantities I enjoy. I certainly do not eat the 5 a day. Mushrooms daily, peas 3 or 4 times a week, cauliflower/broccoli/carrots once a week with Sunday roast, a a small spoon of baked beans a couple of times a week. I can't think of any more. I don't even have salad leaves on salads.

I eat vegetables almost five times a week
This may mean up to three hundred grams per meal.

Some vitamins are found only in vegetables

Crikey, feel strange now that I have to eat cooked broccoli everyday!

I eat at least 3 good portions everyday and some days in veg curries or vegetable hash it could be up to 8 veg a day.

Mine all have to be mushy veg and overcooked broccoli to go thru colon and digestive system.

Never eat onions or tomatoes as these caused me full stomach erosive gastritis. Couldnt tolerate PPI's so got told to avoid above... and gastritis hugely, hugely improved...

If I didnt eat veg I would be in dire straits... ooh and as a child, hated veg...
