I was in the same boat just 3 months ago (11.4 fasting, A1C 10.5% or 91 IFCC). Now I am totally normal, with just diet.
So if you are type 2, that means that you have developed resistance to insulin (due to a long term over consumption of carbs, a over production of insulin followed and then your cells closed up to insulin)...
It can be reversed in time (but also depends on each individual). What I did was to completely stopped eating carbs, I eat:
- meat, fish, cheese and eggs with a side of green leaf salad, or boiled green vegetables.
- I reduced progressively the number of meals (now I eat twice a day - skipping breakfast).
- I lost 20 KGs in less than 3 months.
Later on, I expect to introduce some more carbs like fruits in moderation and so on (I do this radically now, to clean up the system from excessive insulin, so resistance can be reversed as much as possible). I also do this diet now, so I can loose weight...
First thing to remember is that carbs are addictive, so the early stages are like a drug addictive trying to break free.
Also to answer your question, BG will not come down because you made a day or 2 of no sweets. Your liver is full of reserves to dump, you will have to burn all that first... As time goes on hopefully your cells under less insulin overdose will start accepting some more re-opening the doors.
As a timeline expect several weeks until you see any decent results.
In resume, I recommend for some time to eat no carbs except the residual ones in green leaf. Loose weight, burn those reserves in your liver and fat tissue assuming you are also ob
