"What have you eaten" Parallel Chat

I've never had any of the American style Butter Balls either - they are reportedly delicious, smothered in powdered sugar but I suspect, not for me or any other diabetic. Not even sure I would want to try them - the only flavour being sugar and butter, much as I do like my butter. I do like the sound and look of your Bitterballen though.
I'm inclined to agree @Annb. Much as I enjoy butter, I wouldn't relish eating it smothered in sugar.

Those bitterballen OTOH sound tempting and moreish. Could you stop at one, I wonder? Answer: probably not.
Suspect they are exceedingly bad for diabetics, but I'll leave it there.
 
Finally getting over this nasty flu, think it must have been Covid related, such lethargy and fatigue.
Had a couple of migraines too unless it was very very stressed sinuses. Might actually get to enjoy a day out tomorrow, its supposed to be my holiday after all!
Yoghurt and seeds and an apricot. Hard boiled eggs and cheese. Burger and mushrooms

I had bitterballen in the Netherlands. Very tasty. Cross between a crocquette and an arancini but meatier
Terrible timing @MrsA2; not that there's ever a good time to contract a flu-like virus infection. Covid-related or otherwise, it's so very debilitating.
I do hope you get to enjoy a day out tomorrow.
 
It's cold here today. I turned the heating up but it still felt too cold all day. So for breakfast I had some h/m tomato soup out of the freezer.
2nd meal was supposed to be a kind of lasagne using slices of courgette as the pasta substitute and TVP as the "meat" content. It was OK. A bit too wet due to the courgettes but tasty enough, but lasagne it wasn't. The topping was the best bit - cottage cheese mixed with some grated Manchego and some grated Parmesan.

I like courgetti (spiralised courgettes) cooked in passata or courgettes sliced lengthwise in place of lasagne sheets. Slices of aubergine cut lengthwise work well too, or alternate layers of courgette and aubergine.

I'm not a fan of TVP though and prefer a combination of ricotta cheese, parmesan, egg, garlic, and chopped fresh basil leaves, seasoned with a good grinding of black pepper.

A topping of extra grated parmesan cheese is a nice addition to finish.
 
I had a lovely night with neighbour Tale yesterday.
We were going to eat André the very obnoxious cockerel, but because of the rain we didn't get around to preparing him in time to cook so we left him for today.
So yesterday instead of André we had my leftover pasta sauce á la papa with bok choi, lots of grated cheese and a nice side salad. :hungry:

Today we had André the obnoxious cockerel, and I made another side salad. André turned out to be large enough to fill both of us up, and the salad went back into the fridge untouched. I'll add some protein to the salad tomorrow to have an easy meal. :)

Things were going well between Tale and I after dinner, we both like a bit of rough play fighting, but he has a bruised rib and made a very wrong move. After a while it was clear that it hurt enough that no more playing was going to happen, and he wanted to be alone in his misery. I told him to take some painkillers, he didn't want to, not my problem but I'll kick him to A&E tomorrow if it's still this bad.

Went home for an early night, very good idea because I have a hospital appointment first thing monday morning.

And then I received a phonecall from someone who had been one of my best friends until she suddenly ignored me over 2 years ago, in the middle of the night.
"Help, can you please come and pick me up, an hour and a half drive away?"
"Can't drive now, alcohol, but let me see what I can do."

So I called a teetotal friend way past midnight to ask if he was up to pick her, her two very young children and her dog up and deliver them here.
I dug out the bed in the spare room and filled the kitchen with stuff that was there to free the bed and make room for an extra mattress.
My former friend kept saying sorry, and she should be very sorry for the way she treated me, but I told her in no uncertain terms that today was for first aid, hugs, and putting children in bed.
Complicated stuff will have to wait until tomorrow, today we'll just pretend nothing has happened.

So now it's 2:30 am, and I'm hoping it won't be too long before they'll arrive.
I want to go to bed, and I have a feeling life will get a lot more complicated very soon.

Tomorrow's meal may need to be one for two adults and two small children. And my friend couldn't find her phone which also holds her bank card when she fled.
I guess I'may need to provide food for more people than just me in the near future.
Sigh.

Antje, those meals look delicious. Sorry you have stuff going on with ex friend, and now she needs your support. That’s tough. You will have a full house by the sounds of it.
Poor Andre, I hope he tasted good. Cockerels tend to be scrawny with no breast meat, but he looked quite breasty, that’s not a word , but it works.
I hope you manage to get some sleep .

I suppose my problem is that I don't really like courgettes. I do use them in Mediterranean style meals, but not on their own, or particularly identifiable individually. Never used TVP before. It was Neil's idea. Normally I would use meat but thought it worth a try. Neil uses it a lot, but it's not for me - a slightly odd aftertaste which I really don't like much. Neil uses it because he is dairy intolerant, so there's a large jar of it in the larder.

What a complicated life you lead, Antje. It says a lot about what and who you are that so many turn to you for support and help when they are in trouble. Hugs for the complications over the next while.

Hug too for Tale. Hope he feels better today but if not, he really should see if he has done any real damage.
 
We did get out yesterday. Managed a steep walk down to fishing village. Had half a pasty and a wine, sat and watched people and boats.
One small ice cream to help the steep walk back up ;)
Evening we walked down to a free concert on a beach . I had tea!

Today we are going to attempt a longer circular walk
 
Morning all, hope all doing well. Eek another complicated weekend @Antje77, André RIP looked good though,lovely crispy skin. I have never had success using courgette in a lasagne even roasting it first. Keep meaning to try wafer thin chicken which I think someone on here mentioned.
So big football game today but first want to see Alcaraz win Wimbledon. We have a couple of friends coming to watch the football, then hopefully that's it until the season starts in what seems like a couple of weeks
 
André was very tasty, and I liked him a lot better on my plate than in the garden bothering the ladies and fighting with the other cockerels who live peacefully together.

My friend's crisis isn't as bad as I feared, thankfully.
Her partner and his children have been removed from the camping site by the police because of fighting, and they were picked up by his father.
This father told his son he isn't to go back home until after a good talk, and even then only if she agrees.

The house is rented in her name this time, so whatever happens, I won't be stuck with a young family suddenly sharing my house, and the children won't have to adjust to moving and moving again, thankfully.

I was woken up way too early by a delightful 4 year old, made her a cup of tea, gave her and her 1 year old brother a piece of watermelon, and had a cup of coffee with my friend in the garden while her oldest was running around barefoot, waking up Tale to demand a slice of bread to feed to the sheep outside our garden, and finding all kinds of interesting stuff in the barn to play with. :joyful:

After coffee I brought them home.
We'll see what happens now, but it looks like my friend will be able to manage for now.

Very happy I don't have to cook tonight, leftover salad sounds perfect!
 
@Antje77 , sorry no accent aigu for Andre ( I‘m on my iPad, not my laptop which has a French keyboard). Andre sounded like a real piece of work. I had a bachelor pen, all cockerels. Those boys got on surprisingly well, unless a hen was nearby then they got all competitive and nasty with blooded combs, wattles and broken feathers. Too much testosterone surging around their bodies. :chicken::chicken:

It’s good things seem to have settled down. It sounds like your house was a welcome distraction for the kids. I hope you get a restful evening.

Pleased things looking brighter with your friend and her family. You are truly a wonderful person- someone who even an ex friend felt you were the person to reach out to for help in a crisis and she was right.
Hope your hospital visit goes well tomorrow and also that Tale improves.I've got my eye retinopathy annual check first thing in the morning I'm not keen as I hate the eye drops but always go to check things - eyesight is so important.
 
Phew @Antje77 . What a good friend you are.

Did get out on our planned walk today , even though I felt very rough on waking. Head is still so full of cold.
The walk was a new variant on one we did last year trying to lengthen distances so 1st hour was downhill then steep up hill then undulating along the coast to a very pleasant little village where hubby sustained himself with beer and chips . Both had ice cream. Then another long slog uphill but ending relatively flat with stunning views. Having thought it would be too much, I could have gone further. Was out about 3 and half hours but about an hour was resting.
Fuelled with protein breakfast of cold sausage , hamburger and egg. Took some as a snack but didn't need it so ate that about 4 when back home again.
Dinner has been 2 glasses wine and some chicken and veg in the airfryer .

Good morning all (good to see another foodie @Melgar). It's still early but I've already been up for almost 4 hours - went to bed, very tired at about 22.30 last night and, inevitably, woke up very early. Dishes that couldn't be fitted in on the previous wash now in the dishwasher and washing - sink full of things that can't go in the dishwasher, sitting in hot detergent water in the sink, waiting for me to wash them. 3 mugs of tea inside me, washing machine loaded and running. Haven't made the bed yet but time to sit and rest the old legs, so here I am.

Yesterday's food was:

Breakfast: some more of the "lasagne" made with courgette instead of pasta and TVP instead of beef or lamb. Not a success but I'll eat it.
2ndmeal: used the last of the failed effort at cassoulet from a few days ago to make filo parcels. Was going to freeze them but they went very flat so I decided to just use them up. They tasted fine (very good, in fact - a surprise because I actually don't like filo pastry but these were very buttery) but the BG took a bit of a hit - not enough insulin to compensate.

Today's food will be more of the same, but the other way round.
