What did you pop in your basket this week? Low chat level

Sounds great. If theres a recipe re orange /almond cake please share.
No recipe,and I don't know where you live.
But should you ever find yourself near Frinton, there's a small place called Keto Bite UK, which has the most amazing very low carb cakes and lunch food.
I loved being able to choose anything from the menu without even thinking about diabetes.
This is their cake display.

Very friendly owner too, I'm sure he'd be willing to share some secrets if you ask because of your diabetes.

Im always looking for items in can bake with or the occasional retail item that's ok enough
This week I popped 2kg almond flour in my basket.
I had used Ai to find a cake recipe. AND want to use almond with wholewheat flour for pastry
Check the carb rating on the flours to find the lowest. I get Doves flour.

Basket = Swede, cauliflower, Celeriac, cabbage, Sweet Potato, got some nice Cypriot pots, nice flavour and allowed one small one. Fish of various kinds depending on what’s available.
Various berry fruits, satsumas, nectarines……

Greek yogurt = Fage 5% often 2 at a time, I then add to it nuts, mixed seeds, fresh berries mainly but occasionally some dried fruits very sparingly.

Eggs galore…… farm eggs are the best.

I get the 10 cal Jellies for a change, got both premade and packet ones. The packet ones I can put in berry fruits or pear, nectarine.

Lots of cheese of varying flavours….. I also by the mini cheeses for snacking on.
 
I had in my basket yesterday frisée lettuce , a Boston lettuce, some plum tomatoes, a growing basil plant , a rotisserie (lime and tequila) chicken, and a bar of Cadbury fruit & Nut.
 
In the basket this week , UK. More Allinson wholewheat and Almond flour in the basket this week . I used it on an A1 diabetes cake recipe - gorgeous. Chia seed; mixed chopped nuts and trying Violife soft vegan cheese (slightly high in sat fat, but probably ok for minor usage
 
@Antje77 Hi the recipe I have could be adapted to orange and almond cake. As its late here I will write it tomorrow or one day soon. And i did a quik version today by putting all but the egg and flavours into one bowl together !
 
Yesterday, I bought a kilo of small shrimp , a jar of natural peanut butter , a bag of gluten free oats, 2 chicken breasts, a can of chopped tomatoes , romaine lettuce , oranges, lemons , grapefruit and limes plus two cartons of lactose free cream. Oh and a dozen eggs.
 
1.5 lb beef minced; 4x chicken fillets; 1 lb back and streaky bacon (from butcher)

6 bratwursts; assorted salamis and ham sliced; chorizo; gorgonzola; shallots; passata; green beans; Polish spiced ketchup; one bottle dark rum; lard; butter; double cream (from Lidl)

Highland Blue Murder and delice de bourgogne cheeses; two bottles 11% Belgian beer; fresh basil, about 1/2 ton; cabbage; leeks (from Booths)

plus some other stuff (eg bread) for the carbivore in the house.
 
I have been off my usual foods for the past 3 days, I'm suspecting a mild stomach flue or such.
My basket has been filled with random things I thought I might find acceptable: greek yoghurt, cottage cheese, fish fillet, mozzarella, small sweet tomatoes.

You just gave me the perfect idea for long boring days at work! Buy small unpeeled North Sea shrimp and peel them while waiting for something to do, will find out where to get them before I start work again in April. :hungry:
 
@Antje77 Apologies , a family event stopped me sending over the recipe for cake (adapt to orange and almond). But here it is. I used a browser by name of Duck Duck Go and used its AI service fo a cake recipe for Diabetic type 2. I used ingredients in the brackets EDIT this cake recipe wasnt from AI . It came via a search as Anj77 suggested. This was one of a lady diabetic 's recipes
125 gm flour ( 80g wholewheat SR and 45 almond flour)
60g margarine (benecol - lowers cholesterol)
1/2 tspn baking powder ( 3/4 tspn)
1/4 tson bicarbonate soda
60g sweetner (forgotten the name of one used here)
1 egg
1 tspn vanilla
I dspn lemon juice (i used bought lemon juice ) zest and juice of a lemon suggested

Method - heat the oven to 350 F ( i believe this is 180 C) check online
Cream the butter and sugar (using mixer)
Add all the other ingredients except lemon juice, combine
I added a dspn of chia seeds
Add lemon but save a little
Grease a 6 inch cake tin - or loaf tin ,
Cook for 35 mins ( Mine was ready in about 20 - 25) golden brown
Sprinkle with lemon juice and chosen sugar alt. if wanted
This recipe can be adapted to other flavours substituting the lemon juice- baking choc; or orange, almond essence. Others
I found this size a bit small , so increased the ingredients pro rata except the egg , i added a dspn water .
Also 2nd time i put all the ingredients in a bowl together , except egg, popped it in the microwave for 30 secs then mixed with a mixer. Worked well
If you find a nice alternaative please let us know. I hope this works well

Your recipe looks very tasty!
I'd use butter, not margarine. Once I switched to LCHF, including butter and fatty cuts of meats, my lipids went all back into the green zone, so not worried about cholesterol.
I'd only have a small piece of the cake, there's still a substantial amount of carbs from the flour, but a lot less than regular cake and I would definitely eat it.

I don't think AI is qualified to decide if whatever food is suitable for a diabetic.
AI feeds off everything on the internet, including very dodgy sources, which is why AI generated material isn't allowed on the forum.

If you want to make a cake that's low carb, your chances are better if you do a google search on 'low carb cake' and skip the AI results.

it was ust a try. Yes i only have a small piece. And i adapt items that come up
