What have you eaten today?

It is difficult. I just want to refine my carb intake and try to stay at 50 or below as I have a lot of weight to lose. Oats seems to be the only thing left for me that affect my bg and carb count.
I'm down to losing the last 1 stone as I have lost a fair bit since coming out of hospital. Got my first Cardiac Rehab exercise session on the 16th, so over the next 16 weeks I should probably manage my goal. Porridge is a defo NO NO after seeing yesterdays BS results before and 2 hrs after.
Next Tuesday is my 1st Diabetes dietician meeting..........................should be interesting.
 
B: 2-egg cheese & ham omelette. 5.8 before, 5.6 after
L: Leftover lamb, passata, veg & chickpeas with a bit of water all whizzed into a sludge. Fairly disgusting AND it spiked me 1.8 to 7.3 :hungover: Fortunately Mrs DeeJay was out kayaking and took a picnic.
D: Will be sort of ratatouille with cheese & cauli topping plus shredded cabbage baked with cream and salami which WILL be delicious and WILL not spike me.

Breakfast:
2 egg, cheese omelette with asparagus; filter coffee and cream, supplements.
Total carbs (including proteins etc ) = 13

Lunch:
50g cooked brown lentils with salad, mixed nuts & green tea.
Total carbs = 15

Dinner:
Miso soup plus 1/2 avocado & cheese. Lemon & ginger tea.
TC = 19

Finally, decaf coffee & cream, plus 85% dark chocolate.
TC = 7

TOTAL for today = 54, mainly protein & fat based.

Highest BG= 7.0 mmol/L
Lowest BG = 5.7 mmol/L

Not bad, but definitely a revolution compared with this time last year!
 
I made a psyllium husk loaf and have just been grazing on it all day with cheese and peanut butter :bag:

Back on track tomorrow with a dairy/nut free day.

Today: breakfast slab. Will it ever get old? And a coffeencream
L: crustless quiche. Nicer than usual, no idea why.
S: peanut butter cookies. They are great.
D: good sausages, green beans, baby corn, baby carrots

Peanut butter cookie recipe
1 cup peanut butter
1 cup sugar substitute (I used erythritol, and they are waaay too sweet. I will halve it next time)
1 egg
1 tsp vanilla essence
1/2 tsp xanthan gum (optional)
Choc chips or choc squares

Mix into a paste. Shape into walnut sized flattened blobs.
Bake 12-14 mins at 180 degrees.

I only had choc squares, so rather than mix them in, I waited til they came to of the oven and dropped one square on top of each cookie.

B: 3 coffees with cream. Porridge made with Almond milk and a good blob of cream
L: yoghurt, oats raspberries and cream - we must think of a name for this!
D: 4 rashers of bacon, 4 stuffed mushrooms
Yoghurt, cream, berries and oats (again!)
Snack: 1oz cheese

I've made the chia seed pudding thingy so I'll be trying that for breakfast tomorrow. Doesn't look very appetising, but I'll give it a go!
 
I tried the chia seed pudding for brekkie this morning. It's OK, though possibly something of an acquired taste. I missed out the honey cos I didnt have any, and had also ran out of berries so I'll be adding them next time as I imagine that will add some much needed sharpness. I'll report back tomorrow :-)
 
Got the ingredients and it's in the fridge. Hopefully tastes nice. Got a feeling it's going to spike me so will have to test after eating it.

A fasting of 4.4 went up to 6.6 2 hours later. Taste wise pretty bland on its own. I put strawberries and blueberries on top. Added some honey on top too. Probably not an everyday thing but something I can myself having once or twice.

Careful with the portion size as it does bulk up in the fridge overnight so err on the cautious side.

Am just catching up - I don't think it spiked me when I used coconut milk to make it, diluted a little with coconut water.. The one time it did spike was when I put a small handful of dried cranberries in it... :( I love chia, but it might not be everyone's cup of tea, texturally speaking.. :) It's a bit like sago, in a way...

I use Stevia with it, cinnamon and a little cream on top when I ate it... I put the chopped strawberries and blueberries into it when I prepare it.. it certainly does bulk up... it's wonderful fibre - and gentle on your system too...

Can't eat oats as I spike badly on them... if you toast the oats and add some good scotch you can call it Cranachan? Eddie? What is the name of that horrid pud? :) I keep telling my friend Graham, it's not a pud, it's breakfast... :)

I made low carb (sort of) cranachan once. Very nice!

Double cream
Jack Daniels
Raspberries
1 tbsp desiccated coconut mixed with
1 tbsp ground flax seed


Might have to get some chia seeds to see what they are like :)

@Susikav, I sometimes eat small quantities but not a lot because I do get reflux/acid...And I'm also lactose intolerant. :) I'm afraid it doesn't like me back. :) I usually have almond milk in lieu of dairy milk.
It's amazing what you can find to substitute for other stuff... :) I love almond milk and almond bread luckily.... Happy with Stevia.... Very happy with coconut milk in stuff too... :) I'm very happy with cream in my coffee too... :) The only thing I miss really is mashed potato with gravy.... :( I shall allow myself some this week as my numbers are down in the late 4's and early 5's early in the morning again, after a run of horrid late 5's and early 6's... I had a sinus infection which the guys said can push it up a lot...

L: St Agur on crackers :eek: Olives feta stuffed peppers, pate. Delish. But higher carb than ideal.
D: homemade chicken tikka masala with sugarsnaps, fried onion (no time to make bhajis :() and I may have Strawbs and cream for pud. :happy:
That sound pretty perfect to me dear... :)
