What have you eaten today?

Quick update on my hba1c result this morning. Last week when my bloods were taken, the label printer in the surgery was not working and the staff were in a flap about it. Today, they have two sets of results with my name on it and don't know which one is mine! It is either 34 or 59. (Last result was 38) I know which one I would prefer! They are inclined to think I am the 34 and the patient with the missing results is the 59, but they have to redo the test to be sure. Results next week. Will probably come back in triple figues due to the amount of husky bread I put away at the weekend :oops:

Today I will be eating exactly the same as yesterday btw :)

Knowing how you go about things, I'd bet my pocket money on the 34. It'll be interesting though to see if the result you receive is exactly 34 (or 59!), of if there is a slight variation (due to lab tolerances).

I'll cross my fingers!
 
Two small slices of flax bread, one fried egg and the veg left over fried too...
Lentil soup, with less lentils than I would usually add
Going out to Monsoon, a Thai restaurant, where I shall have green papaya salad followed by green chicken curry, with no rice of course... When I was first diagnosed I was worried about eating out in restaurants - I spend a lot of time travelling and live in hotels, where the food is good and hard to resist... I just choose a lot of salads from the buffet and then have the meat or fish but don't have the bread, potatoes, corn, rice, pasta etc, and then over-compensate on the veg... :)

Did you like the Chia pud thingy? I think it's a bit like rice pudding when you make it with coconut milk...
 
Ok, I've ordered chia seeds and they will be here tomorrow from Bulk Powders. I don't like feeling left out lol :dummy1:

@lizdeluz Stewed rhubarrb might be nice with it and is not too carby.

Rhubarb's really good - sweeten it with Truvia or something and it's lush... :) What a good idea... I am going to post a 'breakfast chocolate cake' that is good for you... :D It's lovely, too...

That is SO frustrating - I bet you were looking forward to your results, knowing how good you've been.... :)

I am going to try it for breakfast and test, but I think it should be fine... I have cacao pennies to melt on the top - Christmas present from my lovely, thoughtful sister... :) Can't wait now...

I made lentil soup today - a bit different to the Near Eastern one I habitually make - less lentils and more bulk... I tested at 1 hour and I read 6.5/117 - as long as it doesn't go up much more than that at 2 hours I shall make it a staple... it is seriously good - though I shouldn't say so myself... I was quoting my fussy husband.. :) I will post the recipe if it's ok - it's a real winter-warmer... lots of spices...
 
breakfast - boiled egg spelt toast
lunch ham, pate, babybel, celery pickled onion, 1sq 73% chocolate, soy latte
dinner lean gammon steak( where was the fat?!) mushrooms poached egg tomato, thin crust of spelt bread

was meant to be low cal day but realised date up on gammon- will have to do tomorrow and friday instead

I had 7.4 at two hours, but 4.9 at three... am assuming it's slow burning but full of fibre!

B - flack 9bar and coffee with cream
L - home made bacon quiche with a Mediterranean salad
D - oven cooked salmon with lemon garlic and ginger, served with brocoli
S - 3 quality streets

May have sugar free jelly later if needed

Hi @susikav. It was OK, I think I need to tweak the recipe a bit - I didn't have any berries the first time but added some blueberries with the second attempt which made it more palatable. I'm going to persevere with it though, I think it's just a case of getting used to something different. I might try putting some seeds in almond milk overnight and see how that works out
 
Tonight I had egg, beefburger, tomato and onion fried in coconut oil, mushrooms fried in butter, and spinach baked in cream and stilton which I worked out was about 11 carbs altogether and my readings were 5.7 before and 6.2 two hours after.
Mrs DeeJayR had baked beans instead of spinach so her dinner came to 35 carbs!
Good job I don't count calories.

B: the first green smoothie in a loooooong while. :D But my BG rose scary high (9.2) at 45 mins, then sank steadily for an hour and a half to hit 7.4 at 2 hrs.
Bit of a shocker. And much higher than used to happen!
Various possibilities.
- I didn't have avocado or nuts in it, which I usually do.
- it was the first carbs I have had for brekkie in about 6 months, so maybe a bit of enzyme lag?
- did I balls up on the 60:40 veg:fruit proportions?
I was a bit distracted, widdling dogs, making coffee in the cafetiere, talking to Mr B and sorting out my packed lunch. In retrospect, it's amazing the puppy didn't get put in the blender!

Any thoughts?

S: peanut butter cookie

D: pulled pork, no veg :wideyed: (No time to phaff, had to be in and eat and out of the house in 20 mins, and Mr B forgot to start the food off before he picked me up from work. Yup, I blame him. ;)

☺️You are funny! Its amazing how life speeds up all of a sudden isn't it? I am trying not to eat fruit too much, it always seems to spike me... I love goat's yoghurt and that has hardly any carbs, so I stick to it... I use Super Greens, cinnamon, turmeric, milled chia, blueberries and strawberries... Horrid colour - it looks a bit like a cow-pat, but good for the immune system! It's probably an acquired taste too... but I like it.
