What have you eaten today?

It's funny stuff, isn't it?

It is, though I think it was the coconut milk that was a bit strange as it had an odd after taste a bit like wallpaper paste :-( The lack of berries didn't help. I put some seeds in almond milk last night for brekkie today but it hasn't thickened up :-( I'm going to carry on though and I've bought some more coconut milk so I can experiment over the weekend :-)

I wonder what brand of coconut milk you were using - It usually tastes lovely.. :confused: What a shame - perhaps half milk half water? Although Almond Milk is usually watery anyway, isn't it? I tend to buy the coconut milk powder and make my own, because you can bet I don't have a can when I want one... I like goat's milk as well, but I know not everyone does.. :p
 
I was on the run today so had a Bullet Proof coffee and two small slices of flax bread with ham and goat's Roquefort on - eaten veeeery carefully in the car... :oops: Came back home hungry so we had an avocado each with tinned wild red salmon and I made Rose Marie sauce instead of a vinaigrette... the husband loved it and rushed back out again... It really is good if you have no prawns to hand...
I have friends for supper tonight who are not low-carbing, but one of whom is a veggie, the other a carnivore... I think I will spit-roast a duckling, roast some potatoes for them and do piles of different veg...I will make lots of tiny, different flavour quiches in puff pastry in muffin tins for my veggie... I can make apple pie for pud and make the crust from almond flour so I can have some - with cream.... :hungry: I already ate and I am hungry again... Glutton doesn't come close.... :)
 
Got introduced to quorn last night. Had it as a stir fry and it was actually quite yummy and filling. I went from 4.4 before eating to 5.5 afterwards and that was after I had some cashews and raisins at the end of dinner. One more addition to the menu.
 
Breakfast bacon, poached egg, slice spelt toast
Lunch cheese portion, pkt piri piri chicken slices and salad , soy latte and 1 sq chocolate.
Dinner roast pork. Cauli cheese , roast swede and few peas .

Ought to have been low cal day but starting with a cold so feeding myself up.
 
B: the first green smoothie in a loooooong while. :D But my BG rose scary high (9.2) at 45 mins, then sank steadily for an hour and a half to hit 7.4 at 2 hrs.
Bit of a shocker. And much higher than used to happen!
Various possibilities.
- I didn't have avocado or nuts in it, which I usually do.
- it was the first carbs I have had for brekkie in about 6 months, so maybe a bit of enzyme lag?
- did I balls up on the 60:40 veg:fruit proportions?
I was a bit distracted, widdling dogs, making coffee in the cafetiere, talking to Mr B and sorting out my packed lunch. In retrospect, it's amazing the puppy didn't get put in the blender!

Any thoughts?​

As you know, I love my daily green smoothies and I love to experiment with ingredients too! Well there have been times... And thankfully not too often ... But I've put a tad too much fruit OR not added any fats and this has resulted in slightly higher readings than usual.

Having said that, you wouldn't believe what I put in my smoothie this morning... And for once there wasn't even a hint of greeness anywhere near it but it was the yummiest tasting ever .... yet 2hrs later blood sugar rise was less than 1.5 :eek::happy::happy: Very pleasant surprise indeed.

So I'm thinking it may be too much fruit and OR the lack of fats in your smoothie that may have caused the rise :rolleyes:

Mystery solved!

I made the same smoothie today, added an extra courgette, and some cashews - and the spike was 1.3 :D at 1 hr and was falling nicely at 2 hrs.

What a relief!

and I'm now also wondering if my dawn phenomenon might have played a part. I've got the hint of a sore throat, the last couple of days, and this morning my fasting was 7.9, which is near the top of my range.
If it was that, yesterday (didn't remember to test before eating! Rookie mistake, eh?) I may have only had a rise of about 1.3.

Gosh, that's the same as today...

I think it was Amoy coconut milk. It did seem to improve in taste after leaving it for a day. I'll try again, and experiment with different brands. What brand do you buy?

I love Quorn, it's so versatile . You can make a good chilli and spag bol with it too.

B: raspberries yoghurt and cream and coffee with cream
L: some things slices offers and a chicken breastfeeding portion - I had this for 3 o'clockses as I felt a bit peckish
D: not very hungry so I've just had some yoghurt berries cream and oats. I think I'm going to have one of those evenings where I just pick at things

L: Chicken breast portions and yoghurt
D: 1 baked potato with cod and mixed veg

B: plain omelette
L: celery and celeriac soup
D: stir fried veg, bean sprouts and scrambled tofu (flavoured with chilli, ginger, garlic and lime)

Pudding for later? The chia seeds have arrived and I am keeping my fingers crossed that they will magically transform from frogspawn into a wonderful coconut-chocolate-banana pudding. In the fridge now :hungry:
 
B: smoked mackerel, tomato & mushrooms in butter, poached egg
L: salami & mashed veg soup -- chilli, garlic, tomato puree, courgette, celeriac, cauli, cabbage, spinach, stilton, yoghurt
S: Babybel, babyleaf spinach, mayo, gherkin
T: thai fish curry with coconut milk &steamed broccoli, celeriac, leek, green beans (Mrs D had rice & peas)
