Guys,

I bought some frozen chopped rhubarb from Farm Foods (£1 per kilo!!)
Take 300g, put in a microwave bowl, add about 30 mills of water and microwave for approx 7 minutes. Add 2 teaspoons of powdered sweetener, stir in 3 tables spoons of greek Yoghurt.
Stir it all up, then eat.

You get a great big bowl, tastes like rhubarb and custard, nice and sweet and less than 6 grams of carbs!!!. In fact when you add the "fibre effect" its less than that!!
Lo Carb, Lo Calories and very filling..

Steve.

Hi Steve.

Where did you get the carb figures for Rhubarb. We have very different figures for Rhubarb ?
15g Carbohydrates per 300g of Rhubarb ?

Ken.

I got Rhubarb " stewed without sugar at 0.7% carb, so 0.7 x 3 = 2.1, so VERY low and Greek Style, cows milk yogurt at 2% carb. Sheeps milk is more at 5.6%. For sure this is a VERY low carb dish.
Hana

Yes but where are the figures from. More than one source puts Rhubarb at much more carbs than you quote ?

Ken.

Ken,

the product is Farmfoods Sliced Rhubarb - 1kg

The nutritional info states :-

Typical composition boiled per 100g

Energy 7cal
Protein 0.9g
Carbohydrates 0.8g
Of Which Sugars 0.8g
Fibre 1.4g
Sodium Trace

If there is a problem I would like to know, as I intend to eat a lot of this :-))

Regards Steve.

Hi Steve.

I would like to know too ? The Collins Gem Carb Counter book gives a value for 60g of Rhubarb of 0.3 carbs.

The problem is that there are numerous websites which list the carb value of 300g Rhubarb as around 15g ??? :? The next question is where do Farmfoods get the nutritional information they are using ?

We have had mistakes in the Collins Gem Books before. Jacob's Cream Crackers for instance. Incorrect numbers. I shall be sending them an e-mail on Monday to try and seek clarification. I like Rhubarb too - so it is of interest to me personally.

Ken.

For information of the Rhubarb fans out there - including me !!! :D
This is a copy of the e-mail sent this morning to Harper Collins, the publishers of the Little Gem range of Carb, Calorie and Gi books regarding a discrepancy in the data provided.

Ref : ISBN978-0-00-717601-4
Collins Gem Carb Counter Book.

I am a moderator on an Internet forum Diabetes.co.uk

Recently someone gave figures quoted from the above book for the carbohydrate value of fresh Raw Rhubarb.
The value given (page 130) was 0.3g net carbs per 60g.

In your Calorie Counter book the value given (page 237) is 0.8g net carbs per 100g.

In the GI book the value given (page 131) is 0.5 per 60g.

As you can see there are 3 totally different values for the same food item ? Can you tell us which, if any of these figures is correct as it is very important for a Diabetic to know the correct figures for good control of blood glucose levels ?

The other problem is that several nutrition data websites around the World give much higher figures for this food. i.e. 5g net carbs per 100g ?

I hope you can clarify this for our members . 17797 to date.

Once I get an answer from them ? I will post the reply here.

Ken.

Hi Ken, I wonder if you will get an answer. Surely its very difficult to be completely precise since it will be an average figure anyway, sugar content will vary according to ripeness.
Widdowson (the British official source ... available online in excel form)
gives 0.7g per hundred for stewed rhubarb (50g water to 500g fruit)
and 0.8g for raw stems.
This is all glucose.

The NSP (fibre ) content is 1.3g/1.4g . (so is consitent with the label on the sliced raw rhubarb)
Any data originating from the US (and other places) will add the 2 together giving 2g (2.1g) carb per 100g. I also believe they use a different method to analyse which may result in a further difference.

The gi will be low because of the proportion of fibre to glucose but I can't find any actual gi test on rhubarb, any gi figure given is quite possibly guesswork!

From a personal point of view. I would'nt bother about tenths of a gram, I'd round up... maybe your GI book is rounding to the nearest .5.

Phoenix.

Please note I am not using US data !!! The other sources are UK and official sites for nutrition data.
The discrepancies are not just .5, they are major gram differences ?
It is not me quoting the figures it is the books and websites. Thanks for your in put, appreciated.

As an aside we do know that the values quoted in the Little Gem books for Jacob's Crackers are wrong - so we want to know what is the correct figures. We can all have an opinion about it ? I just want the facts.

Ken. :D

Ken,

did you ever get a response?

I am eating 300g of rhubarb daily with 3 tablespoons of greek yoghurt. Powder sweetener.

I guess this proves that it doesnt have anything like 5g carb per 100g rhubarb.

I have read a few issues about whether eating it in such quantities is advisable or not.
I know the leaves are full of Oxalic acid and large amounts of cooked or raw leaves can prove fatal, but am concerned that the stems are acidic and contain an amount, but not sure if eating 300g per day will result in detrimental effects?.

Regards Steve.

Hi Steve.

As expected No. This was despite a second e-mail as well !! Seems like they want you to buy the books but don't like being asked questions. I have no idea what the carb content is as nearly all the books I have looked in say different things. If you can manage 300g Rhubarb a day, good on you.

Do you live near Minworth by any chance.......? I always thought Rhubarb in large quantities had a certain effect ? :D

Just as an aside the Calorie, Carb and Fat Bible 2009 gives Rhubarb as 4.5g carbs per 100g....... :?

Hi Ken,

reminds me of the very old joke about the boy walking along with a bucket. His friend asked what's in it and he replied its horse manure to put on the rhubarb. Ugghhh we put custard on ours!!

I do occasionally go to Minworth to visit ASDA or Wickes, but I know what you mean about Minworth, I always ensure the windows are closed!.

I might cut back on the rhubarb, as too much of anything cant be good for you!.

Thx and regards Steve.

If you enjoy it and it's not affecting your BS, then eat away !!

There are going to be discrepancies. It's actually very hard to get an accurate carb reading off any type of food.
There are natural variations, and differences in the way it's calculated.

I grow rhubarb (Timperley's Early) simply because I love the look of the leaves. I pull rhubarb every other week March-October and give it to my mother :D Just won't eat it without custard :(

hi guys,
I ate stewed rhubarb with full-fat yoghurt for breakfast for as much of the summer as I could, and the effect on my blood sugar was negligible - so rhubarb gets the thumbs up in my book.

I take it there has yet to be an answer on the rhubarb front from Collins Gem?? I have had a look at various websites and a lot of them come up with 4.8/5 - now I am new at this as I have not really looked carefully at the diet side having been told by the diabetic dietician you can eat anything within reason, just be sensible and cut out obvious refined sugars. and I think perhaps thats not the case.

But a friend has given me a rhubarb crown from my late parents garden which he has won local competitions with and I am really excited to look forward to chomping on this next summer (had to leave it one year to settle) even at 4.8/5 is rhubarb too high?? I have to admit to shedding a few tears when we planted the crown, but thats nothing compared to the torrent that might emerge if I find I cant eat it!! lol

Hi.

No I never got an answer from Collins.....maybe we should stop recommending them on this site. Their customer service is abysmal !! I have sent at least 3 requests for clarification. Not one answer.

So, using the Calorie, Carb & Fat Bible 2009 instead, it shows Raw Rhubarb as having 4.5g per 100g.
However, stewed Rhubarb with sugar ( ) is 31.2g per 100g.

So, there it is. :D

Since first posting about rhubarb, I have upped my intake to 350grams every night and I never get a spike!!. The data on the Farmfoods Sliced Rhubarb product states 0.8g per 100.
I will email their customer service and let you know what they come back with...

Steve.

I know this is a very old thread but I wanted to find out how many carbs in rhubarb. I have just bought some fresh from Asda thinking it would be ok carb wise. After taking it out of the packet and looking at the nutritional values on the inside of the bar code sticker (why do they always do that? Put the nutritional values on the back where you can't read them??) it says 11.5g of carbs per 100g. I thought it was much lower than that. I'd be grateful if anyone could shed any light please

My rhubarb comes up without nutritional information attached, so the only thing to do is test - take a small amount and eat it. If you add it to a meal that you know usually raises your reading by X amount and you see X plus a flicker, then you know you can try a bit more - if you get X plus !!!! then it is best avoided.
I find that rhubarb, for me, is just like celery with attitude, so I can eat it fairly freely.
It is a stem, botanically, so theoretically a good option.
The leaves are full of oxalate, so should be disposed of carefully.
