I find that my blood sugars are slightly up on waking and go down after breakfast, which rather puts me off missing breakfast. I am on no medication but about 20g carbs per day or less.
I think getting enough fat is important at breakfast if you are cutting carbs: so I melt some butter in a small pan and add 3 cherry tomatoes (halved) and a bit later just a few walnut pieces(good for omega 3)....fry gently for a few minutes.

I was low carbing and periodically became terribly tired and also a little down. I would take some salty bouillon and that helped but the problem would recur a few days later. It has taken me a while to realise that I needed to pre-empt these feelings by regularly taking more salt (and fluid)...
Are you eating enough salt? The low carb diet can make you salt deficient and when that happens you feel very lacking in energy. This can easily be corrected by taking say a teaspoon of bouillon ( e.g. Marigold) containing salt. It should help after 20-30 minutes. It's worth a try.

I would have it properly assessesed by your GP. If the reflexes really are increased it is unlikely to be due to diabetic neuropathy or carpal tunnel syndrome. Unless you get it properly checked you won't know.
I have unsweetened almond milk in red bush tea....it has zero carbs, but doesn't taste as good as milk.....I have found I have got used to it though. I don't often have coffee. But a single shot expresso with lots of proper cream is acceptable.
