6.4….likely caused by the beef stew I made. Although I fished out mostly meat, I did have a small bit of carrot and onion….and the gravy was vegetable cocktail thickened with a bit of cornstarch….all bad for me. I was surprised to not really have a big rise is blood sugar…up to 7.1 and quickly down again to low sixes…but it stayed there all night and into the morning. Bummer. Hubby now has a monsterous pot of stew to eat. He’s not sad about it, it’s very yummy.
I found some carb free sausages in my freezer so I’ll pair that with some eggs for supper. At least I’m able to tolerate half an apple with almond butter.
