Customer helplines that use recorded menus that promise to put me through to the right person but never do - and being ill. Oh, and did I mention customer helplines :)
Having PM'd the LC recipe Guru about a low carb cake recipe I baked my very first cake this morning. Although the recipe called for 85g of choc chips I rather fancied a few sultanas so adapted the recipe as needed and even if I do say so myself I am rather pleased with the result. Obviously there is a trade off of high cals instead of the carbs but a slice every now and then with a cuppa.......lovely :D

And I couldnt have done it with out the help of WhitbyJet, well I could have done but my bg levels would be in double figures right now without her help.

OK here it is. I found it to be very nice and a small slice had nil effects on my bg level, :thumbup: my only critisism would be that I found it a little rich for my taste, I may experiment next time using 2/3 Almond flour and 1/3 plain flour and see what effects that has on my bg levels.

NOTE: I couldnt find anywhere that sold Almond flour, but a little research told me it was simply ground almonds which I did find in Holland and Barrett


Stracciatella Cake

110 g butter, softened
120 g cream cheese
5 eggs, medium size
185 g almond flour
sweetener equivalent to 100g sugar (I used Splenda - Sid)
1 tbsp baking powder
almond essence/orange essence/vanilla essence (I used vanilla extract - Sid)
50 g of 85% chocolate

Preheat oven to 170 ° C.
Mix butter and cream cheese really well
Add sweetener and essence of your choice and stir again
Add the eggs one at a time, mixing well after each addition
Stir in almond flour and baking powder
Chop chocolate into small pieces and add to the mixture
Line and grease a small loaf tin or use a silicon baking dish
Pour in the cake mixture, level out the top
Bake for 55 minutes at 170 ° C in a fan assisted oven (would be 180 in a normal oven I think)

I imagine the choc chip cake will be lovely but as I hadnt eaten cake for such a long time I just had to have a few sultanas in it :lol: I think I put in 80g of sultanas which doesn't look a lot per slice and didn't seem to move my bg levels.

I may try a lemon cake next with the zest and juice of a lemon as flavouring which may help even out the richness of the ground almonds, eggs etc. I'm thinking up all sorts of things now :think:

Just found this recipe. Will have a go tonite, or tomorrow morning.

Hope it's as scrummy as it looks.

Sid, did you use a round silicon baking dish. Gave mine to my niece, so will have to use a loaf tin, but think it may take longer to bake as it's deeper. Will also use sultanas.
