Almond butter bread

Rediscovered the delights of this today

1 jar almond butter ( currently on offer via ocado)
4 eggs
1/2 tsp baking powder
1 tbsp coconut flour ( optional)
100 ml almond or soya milk

Combine everything, pour into a loaf tin and bake at 150 degrees for 35 mins

Nice with cheese, also toasts well

Wow! What does it taste like? What's the texture? Can it be a replacement for sandwich bread? Lots of questions!!

Difficult to describe - it's not got a very strong taste, slightly sweet, slightly nutty I suppose. Texture wise it's quite light, somewhere between cake and bread. I use it to make cheese sandwiches and avocado sandwiches - it works very well for those but I've not tried other fillings. Tonight I had a slice with cream cheese and sliced strawberry on it which was awesome

Mmmmmm, now I need some almond butter....(not orcado, they don't deliver here)..... Anyone got some excess stock for sale? :rolleyes:

Do you think it could be used a bit like a muffin or panetone? My god how I miss Panetone....

Seems weird to me, theres no real flour/grain in it. Is it not more like scrambled egg?

I googled for an almond butter recipe...put a load of almonds into a food processor and blast them for 15 minutes. I quite fancy it.

:) Yes, Detoxinista. recommends three cups of almonds at once is about right. Think I might give it a go once I can get to supermarket for loads of almonds! :)
 
Looked up the ingredients on Ocado and estimate around 16 gms carb per loaf so perhaps badcat can tell us how many slices he gets out of it?
