Today 2 hours after dinner my blood sugar was at 6.2.
Thought I would check at bedtime nothing to eat since dinner and get a reading of 8.2 I really don't understand it.:(

Sounds like a liver dump to me. They tend to happen after every 5 hours or so of not eating.
I hope so it's the highest bed time reading in a long time.

thinking about it it is about 5 to 6 hours since eating.

I have found that also
I could starve my self for 16hours and still have a high blood.
However i bet if u took your bg in morning it will be back down.

I hope your right after dinner peak at one hour was 6.7 it's just that being 8.2 a few hours later shook me up a bit.

Are you sure you washed your hands properly? I always rewash my hands and check again if I get an unexpectedly high (or low) reading.

Roast chicken with cauliflower cheese.

I've been caught out by cauliflower cheese myself. I find that cauliflower does spike me - or at least it leads to a late prolonged relative high - as such I limit myself to a maximum 100g in a portion. it also depends of course what is n the cheese sauce, though I found to my shock it was the cauli not the sauce ( complete with flour) that was doing the damage when I retested a day later with the same meal but no cheese sauce which I had assumed would fix the problem. For me it seems to be something specific in cauli - doesn't happen with broccoli for example.

Could be but only went up to 6.7 at 1 hour then back down to 6.2 at 2 hours and home made Cauliflower cheese is a regular item on our menu and only a small portion maybe about 50gm at the most it's never spiked me before.

I have found that when I have been walking around the house and take my Blood Glucose level its is always a little higher than if I have been resting for 10 mins after sitting.

I really don't understand it.

There's another thread just started about how much protein we should eat. I've been cutting back on protein (still 40gms carb, or there abouts) to obtain the same results I used to get on just low carb. I'm only guessing that protein will convert to glucose when you don't give the body carbs (just a theory) and it takes longer to convert than carbs which seems to happen very quickly.

The organs of the body all seem to have a time when they work best and the liver is 11pm - 3am or there abouts. This URL is interesting, if you like that sort of thing.

If you ever feel like experimenting with a slice of bread which might be off your low carb menu, chew it until it tastes sweet. It's surprising how quickly is converts to sugar just by chewing. It's also surprising I can remember that bit of chemistry from when I was a teenager, especially as it's all I can remember of chemistry.

Roast chicken with cauliflower cheese.

So, gluconogenesis? You had barely any carbs, your body wants to get glucose from somewhere so it converts the protein in the chicken and the cheese into glucose. It's a process that could be expected to take 3 or 4 hours before protein eaten starts raising blood sugar.

This is why type 1s on a low carb diet will bolus for protein, but will often do the bolus for protein after eating.

Thanks all for your replies. all very good ideas and the answer could be any one of them, blood sugar dropped to 7.0 about 2 AM and fbg this morning was 5.7 a little higher than normal, will have to do a bit of empirical experimentation over the next few days and try and sort it out.
