I read on another thread some time back (can't remember the thread unfortunately) where some investigation was going on into the possibility of carbs eaten with fat having a much lower impact on BG levels.
Just recently I thought I'd have a look at this myself, here's what I found;
Wholemeal bread sends me into the low to mid teens so that was out, sadly so does tiger bread. I found a white bread that didn't spike me quite as much (don't know if I'm allowed to name brands so I'll be cryptic - it starts with 'H' and ends with 'ovis'! Soft white, medium sliced)
So, day 1 with a starting level of 6mmol, two slices toasted with butter and 2 hours later 9.2mmol
Day 2, with a starting level of 6mmol, two slices of (full fat cheddar) cheese on toast and 2 hours later 6.9mmol

Day 3, repaying a favour with a full English at a cafe, 2 bacon, 3 sausage, mushrooms, beans, grilled tomato and 1 slice of fried white bread (I also had half a slice of white bread and butter) - I didn't take a 'pre' level but my fasting level is always between 5.5 and 6.3, but 2 hours after eating I was at 7.2
Hardly conclusive evidence, but it may be worth trying your beans with grated cheese on?
