Blood glucose rise from eating salad and berry fruits with cream

I have noticed significant blood glucose rise after eating cheese salad and fruit salad - strawberries, raspberries and blackberries with single cream. Yesterday, my blood sugars rose from 6.2 to 10.9 in two hours after first eating a salad followed by fruit salad 40 minutes later. The salad contained iceberg lettuce, radish, carrots, celery, tomatoes and spring onions. The salad dressing was home made with olive oil, white wine vinegar and mustard.

Today I had a similar fruit salad which raised my BG by 3.0. I was expecting berry fruits to be relatively low carb. Perhaps I need to eat smaller portions of them.

I think the salad probably raises my blood sugar by about 2.0. In contrast, a cheese omelette does not raise my blood sugar at all. Is there anything in the salad I should avoid?

I make a jelly using sugar free jelly, some powdered gelatine and some no added sugar squash (the sugar free jelly sweetener is not to my liking) and add frozen berries to it.
I make the jelly quite strong - or is it stiff - so that the fruit doesn't go all squashy, and it really cuts down on the amount of fruit I eat. I can only eat a small amount of carbs a day if I am to keep my blood glucose levels normal, and if faced with a box of strawberries there's only ever going to be one result.....

As others have mentioned, you do have to pay attention to the amount of food you eat. Just because some fruit and veg will have lower carb content and are generally better choices for lower carb eating, they still contain carbs.

In terms of veg salads, I'm always careful with carrots and tomatoes and limit amounts if I fancy some. Also, do check labels on anything that goes into your homemade dressing. Sometimes, there is added sugar where you least expect it. For example, recently, I discovered that not all pickled gherkins are the same, and some brands contain a lot more sugar in the pickle juice than others.

I have noticed the same with homemade soups. Each vegetable may be low in carbs, but together and without much protein and fat, they raise my blood glucose quickly.
