hi, is this a normal thing to happen.

So my blood before my meal was 5.3
One hour after my meal it was 5.4
Two hours after meal it was 6.3
Then after 2.5 hrs is was back down to 5.5,

Is it normal and okay that blood sugars doesn’t rise within a hour? I know the numbers itself are okay but more so the time frame

They are good results, but it does depend on what you ate. Some foods are slow to release glucose. Other foods release it very quickly.

Good numbers then. Carrots and spuds are starchy and would normally cause a spike. The fat from the roast will slow things down somewhat. I have no problem with roast potatoes, but only 2 or 3 small pieces, and I am also OK with carrots.
