Bread - Made with Coconut Flour?

A quick search on google found a review of a recipe for bread made with coconut flour. it sounds pretty tasty (not like cake though, boo!) and I intend to try it!
 
COCONUT BREAD
Ingredients

¾ cup sifted TIANA Organic Coconut Flour (approx 100g dry weight)
½ cup TIANA Organic Virgin Coconut Oil or butter, melted
6 eggs
2 tablespoons honey
½ teaspoon salt
1 teaspoon baking powder

Method

Blend together eggs, butter, honey and salt. Combine coconut flour with baking powder and whisk thoroughly into batter until there are no lumps. Pour into greased 9x5x3 inch or smaller loaf pan and bake at 175C (350F) for 40 minutes. Remove from pan and cool on rack.

As far as I concerned it may be too much carbs....? :( i'm willing to try it if somebody wants to cook it....Patch ??
 
I made a plain butter cake with it once. Good result. Too high in carbs for me then as I still wanted weight loss. Salty taste to it
 
The carb content of the flour is 26 g per 100 g. The whole loaf only contains 100 g of flour so the carb content of a slice should be much lower. I think the recipe I saw (same as above actually)made 15 slices. Also the fibre content of the flour is high at 39%. yum yum!
 
Erm.....not quite right. The 100g flour is dry weight along with all the other ingredients which add more weight. When baked it is heavier, typically around 300g/400g. The nutritional information shows that a serving of 100g is 26g carbs, thats about a quarter of a loaf. Not sure how many slices that equates to ? It IS high in carbs per slice so do be careful.

Just mixed it & put it in the oven. I followed the recipe very closely apart from some minor substitutions using available ingredients.

110 g ground almonds
10 g wheat bran
1 tsp baking powder
1 tsp xanthan gum
sifted together

1 large carrot, finely chopped
80 g butter
microwave for 1 min to soften butter
* I then noticed some creamed coconut so I added a sachet
beat
5 eggs beaten with a fork
add eggs to carrot & butter mix & beat
add dry ingredients & beat well

put into silicone loaf vessel & bake at 175°C for 40 minutes.

The silicone loaf vessel was of the specified dimensions. Very important to follow the instructions slavishly when first trying a recipe.
 
Worked fine, nice texture & taste, but collapsed a bit on cooling so a longer time/higher temp would be better. Say 200°for 40 mins or 175 for 50 minutes.
