Bread/muffin/baking recipes.....

Hi everyone, I hope you are all doing well.

Just wondering if anyone has any sweet/savoury bread/muffin etc recipes to share with me?

I enjoy baking, always have, and am trying to find diabetic friendly alternatives. This weekend I made low carb banana bread; it was pretty good, much better than I thought it would be, but spiked my blood sugar a little too much, so unfortunately I won't be enjoying it very often!

Any ways, I know there are heaps of threads for recipes, but after a quick glance whilst at work, I didn't find too much, so just figured I would ask.

INGREDIENTS

1 1/2 cups almond flour

2 tblspn coconut flour

1/4 cup flaxseed meal (golden if possible)

1/4 tspn salt

1 1/2 tspn baking soda

5 eggs

1/4 cup coconut oil

1 tblspn honey

1 tblspn apple cider vinegar

METHOD

Preheat the over to 180C/350F degrees and grease a loaf pan.
Place almond flour, coconut flour, flax, salt and baking soda in a food processor.
Pulse the ingredients together
Add and pulse in the eggs, oil, honey and vinegar
Pour batter into a the loaf pan.bake for 30 mins @ 350

Hi Buttercup, I have always loved baking too and whole meal banana bread with peanut butter used to be my favourite breakfast but bananas are just liking eating sugar from the bowl for me now. I make ginger biscuits using ground almonds and Xylitol. I will post the recipe on the 'Post Your Recipes Here' thread when I get home from work. I also make savoury biscuits from milled linseeds, salt and pepper and dried herbs or spices. The downside of low carb baking is the cost - nuts and seeds are a lot more expensive than normal flour. I use Xylitol when I can afford but more often have to use an artificial sweetener like Splenda. Pinterest is great for low carb baking recipes too.

My wife sometimes makes Molly cake (Google it). The important thing about baking cakes or whatever is to avoid adding any sugar and rely on currants, raisins or similar or sugar substitutes. Never use icing etc. Use flour alternatives if you can afford them such as almond flour. In summary, sadly, don't bake cakes too often. If I buy breakfast muffins I will only buy wholemeal ones; same carbs but less spiky.

Thanks but is honey nesesary or can I use stevia?
