I appear to be having one for Christmas, can you buy 'mixes' for them that are suitable, ie low carb? Don't really know anything about baking bread, i'm quite interested in using it and want to have what I need here so I can use it straight away.

Can anyone help?
 
Hi Daz,

There is usually a recipe book with them and you can adapt them to suit your needs.
It is also a good idea to experiment using ingredients of your choice. Some people do use ready prepared mixes.

If it has a delay timer on it then you can prepare in advance and come to down to breakfast with the gorgeous smell of bread pervading the kitchen......Mmmmmmmmm :D
 
Thanks Catherine, quite like the idea of waking up to freshly cooked bread, have a timer on my coffee machine too so looks like breakfast will be making itself in future, and on time too :D

I don't need all these fancy gadgets with timers and such, I just make sure the wife's up first and she makes my breakfast! :wink:

Having found a UK supplier of wheat gluten which improves the texture of bread
by making it, well, more glutinous, I made this bread.

I claim no originality, although it is my recipe there are many similar recipes
around.

120g wheat gluten 16g carbs
10g oat bran 5g carbs
60g very strong wholemeal flour 39g carbs
45g soy flour 11g carbs
30g linseed (flax) 9g carbs
10g sunflower seed 2g carbs
1/2 tsp of sugar (carbs not counted as the yeast converts it)
2 pkts dried yeast.
15 ml of oil
Warm water to mix.

You can use a bread maker to mix it, but I then take it out after kneading and
raise it somewhere warm, single raising and straight into the oven. About 30
mins at gas mark 4.
This makes a 530 g loaf @ 15g carb per 100g.
One of my slices weighs 35g so 5.25 g of carb per slice.

I also add wheat bran but only a little, the more you add the less the bread rises.

Raising can take and hour or more, don't rush!

PS the only suppliers of wheat gluten I could find are fishing bait companies, they can only supply it for bait as they are not licenced for human foods. So best take up fishing, it is delivered in sealed polythene bags.

I use Wrights mixes. All very tasty, however the Mixed Grain mix per 35g slice is around 16g carbs. One of those a day fits in with what I do. Not low carb though........

I use a Panasonic BM which does everything apart from place the mix and water in the machine. Leave it on overnight and the smell of freshly baked bread gets the old taste buds going ! I have to restrain myself from eating loads with lashings of butter........I used to waste a lot as it doesn't last for mare than a couple of days, now I bake it, cut it in half and freeze half. Once that is later defrosted 5 minutes in a hot oven wrapped in foil freshens it up for another couple of days.

There are many mixes and also cake mixes too which if you are careful with portion sizes can be a treat once in a while. :D

Hiya! Wheat gluten is often called Vital Wheat Gluten and can be bought for human consumption from many places. I usually get mine from flourbin.- you have to buy enough to satisfy their minimum spend and make the delivery charge worth it - but they do seem to be the cheapest. A dearer alternative but better for smaller amounts are some of the Atkins diet sites. Try avidlite. Out of interest, how on earth do you use wheat gluten as fish bait?

I don't know Smidge, I have never fished! I think it is mixed with water to make a dough and then moulded onto a hook, for carp? Maybe.
I will give flourbin. a try. Thanks H
