At 38.5g carb per 50g dried weight it’s virtually identical to the carb count for brown rice! I would disagree with whoever told you bulgar wheat was good for prediabetics/diabetics, and your blood results confirm that for you. Some of your other contents of your stuffing may not be helping either, beans could be a problem or even the carrot. Maybe try the recipe without the bulgar wheat and see if that improves your results.

Off the top of my head, I'd think bulgar wheat is the same as rice as regards carbs. Did she mean it would be better than white rice, though? The refined carbs are a bigger problem than things like brown rice, which may have the same carbs but take a lot longer to process, so you don't hit the blood sugar levels so hard and fast. But the bottom line is that carbs are carbs, and it takes some learning about what carbs you're eating. With a recipe, you can put it into an app like MyFitnessPal and see what the carbs of the raw ingredients add up to.Being very new to being pre-diabetic I bought a meter to see what is what with my blood levels.

Last night I made myself stuffed peppers. 1 medium pepper cut in half, Onion, garlic, courgette, a few green beans, little carrot and about 1/2 cup of cooked Bulgar wheat which was cooked with some spices and curry powder.
Pre evening meal reading was 6.9, 2 hours later the reading was 11.8 !! My fasting reading this morning was 5.7.
Could the Bulgar Wheat have caused the huge spike in my levels? Is it something I need to avoid in the future.

It took me ages to realise how high the carbs in all the beans was and I rarely eat them now. I decided some root vegetables were more important! I'm slowly learning how much I've eaten for pleasure, and got pleasure from eating, in the past. For me, this has meant facing up to big mental changes as regards food and meals.
