Can’t believe the difference with low carb

Hi all, hope everyone is safe and well.
Just thought I would start by saying thank you to everyone on here,
So on being diagnosed I was 17stone 7 and blood sugars of around 11-13’s, I now weigh 12stone 1lb aiming for the 11 stone goal.
With tablets my hba1c went to 43 then in September I went and had my review
And my hba1c went from 43 to 57 I think it was, I decided it is time for a change and stop my jardiance since my doctor was saying I maybe type 1 and the tablets are just making the numbers look good. That’s a whole other story I was not happy how she went off. Walking round with my urine strip like the one ring that rules them all..thought she was going to go on the roof tops to show everyone, shouting how I had ketones in my urine and looking at me like I had just taken a dump on the carpet. Phoning the hospital,going to speak to the other doctors, she had me panicking I thought I might just take that dump on the floor.
I tried to tell her the ketones were probably from my diet change but she wouldn’t listen.
So I started the low carb diet 3 weeks ago and think I maybe turning into a kale I love the stuff, can’t believe I’ve never had it before. If u crisp it up it taste like crispy seaweed it’s lovely.
Sooooo since starting
My blood sugars on waking are always the 6-7 mark.. all through the day before and after food they are in the ranges of 4.8-6.8. Feel like shouting at her when I next go that the numbers are better now I’m off jardiance and on a low carb diet. (She prob won’t listen) I would rather see another nurse but unfortunately I’m stuck with her.
I’m sticking with low carb from now on but what I want to ask is, does anyone have any meal ideas as I struggle sometimes and find I’m eating the same meals and it gets very boring.
A favourite of mine is beef brisket meatballs, cooked in lurpak, garlic,onion,kale and half a tin of tinned tomatoes. I have this on cauliflower rice and it’s amazing.

Hi there Dudette. Big well done in taking charge of your diabetes. If we don't take charge of it, the chances are it'll take charge of us, sooner or later.

In terms of meal, you could have a look through this thread. There are literally hundreds of ideas on here - all created by people in your shoes. Other places to have a look are dietdoctor.com, and there are loads of low carb food bloggers, like alldayidreamaboutfood.com , lowcarbyum.com , twosleevers.com (although she does a fair bit of non-LC too, so best to filter your search), ibreatheimhungry.com , headbangerskitchen.com , and so many more!

If you fancy something you used to have, it can be worthwhile searching Google for "low carb.......... " You'd be astonished how many options there are out there for modifying things. Some work really well, and some aren't worth the effort, in my view.

However, the big takeaway from this is, there is NO reason to be bored of your food.
 
Well done. Sounds like the presence of ketones caused consternation. The longer you have good results with only diet the less likely type 1 becomes. But I would still want clarity on this by having the T1 antibody test panel done.

How do you prepare it to crisp it up and make it taste like crispy seaweed?
My neighbour has way more kale in his garden than he can ever eat, so I wouldn't mind becoming a kale addict myself :)

Yep, kale. I love a nice crispy bed of the stuff.. It is a little like seaweed.

I put it in olive oil with garlic and just fry it up, definitely the best thing I have tasted. I put it in everything

Be careful of USA based sites that count carbs differently if you’re counting. (They show total carbs and you need to deduct fibER, In the U.K. and most of the rest of the world carbs are already shown as net and have fibRE already deducted and listed separately for us)

I'm guessing that you just deep fry it (Crispy Seaweed from the Chinese takeaway is just deep fried cabbage)

If you have an air fryer, you can do it with or without oil - not that avoiding fats is a thing for us usually.

I know you want me to buy an air fryer, but for now I'll go with pan frying!

Sorry to continue with a little derailing, I toss chopped kale in olive oil, s&p then spread on a baking sheet and put in a hot oven for 5-10 mins until the edges just go a bit charred.
 
Oven might work better then in the pan especially if you have a convection oven.

I imagine the oven would work like a dehydrator almost. If the oven is fan, the pieces might end up flying around, as they do in my airfryer.

@Antje77 - I reckon a very low oven for a few hours would work well.

Actually, I just notice @DJC3 uses a faster cook.

Morning, lamb or vegetable mousaka without potatoes, or courgette ricotta and spinach lasagna all very tasty

The main difference for me after giving up all those fabulous carbohydrates has been the utter absence of IBS - the ghastly bloating and inability to fit into last years' trousers. Plus, I think I've lost a fair old bit of weight (don't weigh; can't be arrsed) Win. Waist size down at least 4 inches, in four months...

Another change has been my return to making biltong in quantity. Biltong is a filler in itself; I treat it as a meze, over a few hours. I'm getting even better at making top-quality product - big win!
