@Galja while Dr. Fuhrman is well known in the US, I don't think he is in other countries. The reason I recommended his book above all the others to coby is because 1) his diet is the least restrictive on fat intake, and allows some animal protein, unlike the other whole food plant based diet books, 2) he strongly encourages a nutritionally dense, whole foods, plant based diet, and 3) he created the diet in that particular book specifically for people with type 2 diabetes.
coby was asking specifically for a vegetarian cookbook for diabetics, and Fuhrman's book, The End of Diabetes, has a lot of recipes. If you know of a LCHF diet book specifically for vegans or vegetarians, I'd appreciate a recommendation.
