I had to find a source of iron and my dr suggested overcooked broccoli everyday. I'm just one point above anaemic following the addition of broccoli... was anaemic before. So happy with this, despite having to be overcooked I must still be getting some iron from it.

iron is a mineral, so it won't be affected by the cooking which will just break down the cell walls and make the iron more accessible.
do you drink the water you cook the broccoli in? I take my hat off to you, if you do - not sure I would be able to face it - but if you drank it you would get any of the nutrients that aren't destroyed by heat, but leach out during cooking.
we microwave most of our veg, so the most I add is about a tablespoon of water, but by the end of cooking, a lot more has collected in the bowl - the liquid that comes out of the veg as they cook. I should reserve it, and add it to soups and things... but usually just tip it down the sink. Bad B.

Here's the low carb naan. I made them on Sunday but used Xanthan Gum as I didn't have the husk flour. Also added Nigella seeds to the mix. They were yummy.
For the lazy like me, Aldi have started stocking tubs of ready-made cauliflower rice flavoured with parsley (although they have it plain as well). The flavours do seem to complement each other. Price is 79p from memory - two portions.
