I really sympathize about the rice: I *love* rice. Don't really bother with substitutes because I don't find anything really works. What you could maybe try is having a really tiny portion of rice, like a tablespoon. Sometimes when I do that it kids my brain that I'm having a normal amount lol. But make sure you replace it with lots of other nice things - don't just go hungry. Its hard with a history of an eating disorder. I was anorexic when I was younger too. It's left me with big hang ups about being hungry and only having a small amount to eat. That's why I love low carbing - because it's not about cutting your food down,it's about eating different things. And ironically, I don't have large portions at all, even though I could if I wanted to, because protein and fat are much more sustaining.

Type 2 on Metformin, diagnosed Jan 2013, ultra low carber, Hba1C at diagnosis 8% (11mmol), now between 4.5 and 5.5 mmol. 20kg lost so far :)

I learned to like rice growing up. Guess it's time to ditch it again. *sulk*

I eat rice two or three times per week but only ever Morrisons parboiled brown rice. I give it 35 mins rather than the stated 25 mins and it is still a little al dente. I did try basmati long grain brown rice but that upped my BG levels. Even a big plateful of the Morrisons stuff only ups me by 0.5 after 2 hours.

Yorksman, I'm going to try hard and convince the rest of the family to switch to brown.. Though it did take longer to cook. We never have parboiled rice as we flash fry it with spices first.

Finzi, Although Its sad you had an eating disorder too, it's nice to have someone to relate to, who understands the psychological side of food choices. Having your perspective warped and everyone around you telling you what to eat and all of a sudden, maybe they were wrong, maybe you were wrong etc. I'll try it, though my mother might be concerned about me restricting portions in case I fall into bad habits.. But we eat so much Indian food... Carby yum mess..

Well first thing's first, brown rice. I believe it is cheaper and healthier all round so it's worth a shot!

PS Yorksman is amazing. You're all awesome, really helpful and supportive x

Yep, you have to adjust your cooking techniques if you want to use it. One of my favourite dishes is from the Hairy Dieters cookbook, Southern Style Chicken and Prawn Jambalaya, http://www.womanandhome.com/recipes/532 ... -jambalaya

You can't cook this rice as per the recipe and have to boil it for 20 mins first. It's going to get another 15 mins or so in the pan so you end up with a nice rice. I do the same with chinese style cooking but, as it is in the wok only for a few mins ususally, I boil it for 25 or even 30 mins beforehand. What I do is to add a suitable stock cube to the boiling part and after, drain and keep the excess liquid and let the rice cool, stirring occasionally. It doesn't stick together. I tend to make a lot and freeze what I don't use. The rice is robust enough. It is a good base for a fried rice.

I know what you mean about the rest of the family. My daughter, aged 21, still won't eat most vegetables. Not even mushrooms. She's off back to uni today thank goodness. I can't be doing with cooking two separate meals and the kitchen isn't big enough for two of us to be cooking in it.

Blue Dragon wholewheat noodles work for me. Obviously everyone is different and you have to test for yourself but it appears to be what it claims to be and are probably low GI.

Hi Andy, you dont say if your type 1 or type 2, never mind, your BG appears to have been so good after the good as it contained little or no carbs which would not make any difference to your BG. However 3,7 is classed as hypo so you really should have treated that with some quick release carbs such as lemonade. The birthday cake you had has brought your glucose level up, which had probably dropped further from when you ate the Chinese food. Also Chinese food has a nasty trick of making your BG soar hours after eating it. I am on a pump so i yse a different kind of bolus to stop that happening.

Just don't eat anything with rice or wheat. All the rest is pretty much ok - meats and fish, veggies, fruit, etc.

Hi, As a type 1 now on porcine, I still have the odd chinese meals. As a diabetic you don't have to punish yourself...everything in moderation and common sense. Before the meal inject a bit more than normal short acting insulin...enjoy the meal...then after 2 ish hours check your BS and do a correction if necessary..usually 1 unit insulin per 1 unit BS. However, if its type 2 then I cannot really help as I use insulin.

Hi Yorksman

Where do you get your Blue Dragon Wholwheat Noodles - are they in any supermarket or do you have to go to a specialist Asian shop (which we do not have where I live) - I would like to try these too for my Chinese dishes.

Whelks,winkles... All crustaceous seafood except prawns. Can't do crab.lobster or scallops.
Don't like the way they are killed and cooked. Save our Scallops. SOS !!!
Also HATE evaporated milk.
Reading this thread made me think back to not long ago when I had an addiction to Suchi.

I used to eat it at least once a week if not twice.

I used to eat white crusty poppy seed rolls from Waitrose with full fat cream cheese or Boirsin cheese... Or lumpy pate.

I used to eat pasta several times a week...Liver and creamy mash with a large dollop of butter. I used to eat Instant Indian meals with rice.

I have totally changed the way I eat but I can't say I miss any of it really....

Both Morrisons and Sainsburys do them. I expect others do too.

If you have a specialist chinese wholesaler, there are lots of interesting things to be found. I got some brown rice vermicelli from one of them but they had loads of stuff I'd never heard of before and the guy told me they were due to get 14 new types next month.

The blue dragon is good for me though. Some nice chicken stock with chunks of chicken, king prawns, some chinese leaves and spiced with chilli, garlic and ginger, some wholewheat noodles and garnished with finely cut spring onions. Very quick and simple to make, it's ideal if you have some left over roast chicken.

Thank you so much for the info Yorksman - your picture looks delicious. I am off to Sainsburys for a look - I love Chinese dishes and have just received a Chinese cook book by Ching-He Huang who was on television with her Chinese cooking.

Unfortunately, we dont have a Chinese Wholesaler here so miss out on that.

Yes, I got the same. A lot of her dishes are OK as is or are easily adapted for diabetics.

I got another small and cheap one everday chinese from a discount bookshop for £1.99. YOu can tell from the cover photo that is has easy to make recipes which taste good.

One thing I have found you can add into some of these dishes is barley which is very low GI.

You can probably buy some spices online at least. They are nearly always a lot cheaper and better quality than supermarkets and, being in packs, cheap enough to post. The Asian Cookshop has spices organised country style too, so if you go in for Indian or Thai, often the same dishes but with different spices, you'll be able to order from one source.

Thanks for the link Yorksman - I have bookmarked this one as it looks good. Have found the Blue Dragon noodles in Tesco so have ordered them on my shopping for this week's delivery.

Happy Chinese Cooking!

Hi Yorksman and Luna21, I have looked on Tesco's site for the Blue Dragon Wholewheat Noodles and it states they contain 37.2 grams carbs per 50g noodles. My question is that with all those carbs how can they not affect your B/G levels?

I like Buitoni wholewheat spaghetti, penne and fusilli.
