What worked for me was to test, test and test some more. Without changing the fats my wife used butter for pancakes previously and some vegetable oil for other fried items it did move my cholesterol downwards with increased exercise, this is consistent with science which says exercise will help reduce cholesterol.
The biggest shift I got was going to LCHF which has produced a 2 to 1 ratio via a total cholesterol of 3.99 and trigs of 0.5. During this phase the fats I use are loads of nuts, cheese (black bomber, Wensley Dale, Mexican hot, blue), coconut oil, raw and the other type, olive oil, Greek Yogurt, mackerel, salmon and avocado. I / we don't smother to excess with the cooking fats, just enough to cook and flavour. I have also increased my weights which might have had an impact. I am aware that some on LCHF have a higher cholesterol, so testing I feel is important if the numbers are a concern. Obviously my numbers do not correlate with what the ADA say, despite having loads of saturated fat in my diet so I for one can't support the premise. I am effectively doing the opposite of what is said to be healthy but have healthy markers...this reminds me of diabetes, ie. do the opposite of the dogma and I got non-diabetic numbers.
