CoYo-tastic!

Oh, am very excited, @Pipp - thanks for the recipe!

Am v sad, though - just went into the kitchen to get going and thought I had two cans of coconut milk, but only have one! Aaargh! Will have to wait until tomorrow!

Not sure about the sunny window ledge, bearing in mind that snow is forecast tomorrow, but am sure I'll work it out. :D

Thanks again and hope Mother's Day is better than you hoped. x

Saw this below on twitter today. Might be useful if you are as addicted to Coyo as I am. Haven't got any to check nutritional info on them currently but it seems it does vary with seasons ...

I love coconut yogurt. I use the Easiyo system (https://www.easiyo.com/) and they do a Greek & Coconut flavour that's soooo good. It works out at about £3.50 a kilo ( once you've bought the kit for about £12 in "The Range" etc. ) - it does raise my BG but only a small amont and not for long, and that's if I have a decent bowl full. They do sugar free mixees too.

I like the coconut Easiyo stuff too, but it is made with cows milk with added coconut, so has the usual carb content of yog.
Whereas coyo is made with coconut milk, which is much lower carb.

Both delicious! but the carb content makes a difference if we are doing the very low carb thing.
