@chalup - can I ask for the recipe, please, and where you got it from?
Hi there. You sure can ask. It is a bit from looking at low carb recipes and a lot from what was in my head and fridge but here goes.
This fed 8 people with leftovers
1 kg bacon ends chopped up then fried with
2 onions chopped
bunch of mushrooms chopped
drain the grease (I didnt and it was too greasy but tasty)
put that mixture in a large pan or roaster and mix with
1 head cauliflower that has been riced (run through the food processor or grater.
fry up 1 kg ground beef, drain and add to above mixture in roaster
mix about a pound of grated cheddar, 500ml heavy cream, and 250gm creme freche in the same fry pan and cook over medium heat until the cheese is melted. I added a couple of pinches of xanthan gum
Pour the cheese sauce over the other stuff and bake in the oven at 300F for an hour. Let stand a half hour to cool off and firm up a bit.
It came out tasty, but as I said greasy. Put on noodles for those that do and on its own for us that do not eat noodles. It was also extremely filling. Even the picky grandkids liked it. Look on google for a site called ruling the keto diet, they have a lot of very yummy looking recipes with very good instructions.
