Hi. I was just reading on line about eating beans ie kidney beans with rice or butter beans etc is better and lowers the carbs, than eating rice on its on. Is that true? Hope so love beans and rice with some mushrooms garlic and onions yum. What does anyone else think? As it is now don't eat rice at all. Also has anyone heard of pre-germinated rice? Doesent sound very nice but good for diabetics.

it wont lower the carbs, but the absorption will be slowed overall, it will be slower than the rice on its own anyway............which is good as good blood sugar is as important as stable, steady ones....

If you add your beans to your rice you will increase the carb content . If you replace an equal weight of rice with beans then it will be a very slight increase.*
The beans are high fibre so as NRB says helps control glucose stability. It also helps satiety so you are less likely to want to eat so soon,
You have to be careful with the rice, soft, fluffy or sticky rice tends to be quite high in GI whereas the firmer varieties (not overcooked) are lower. Basmati is a good choice. Nutritionally, white rice is a poor choice as it has been stripped of most of it's nutrients; you are better with brown rice.

canned red kidney beans 17.5g carb per 100g (6.2g fibre)
Brown Basmati rice cooked 15..6g carb per 100g
I wasn't aware of pre germinated rice. I found this http://www.sciencedaily.com/releases/2008/09/080922155950.htm
